Took the recommendation of Tripadvisor. Near our hotel Crowne plaza so choice was easy.
We went for lunch on weekday, got to wait still but was worth it. Only tourist there, counter sitting only. The staff were friendly but speak no English. Lucky we know what we want (urchin, white shrimp, firefly squid etc all Toyama delicacies). used google translate or point to show the sushi chef what we want. We ordered as we went along as we didn't want all to come at same time. We didn't try the set menus which seems to be a great value if you like all kinds of sushi.
Sushi was fresh and made on the spot. Love the atmosphere and the Japanese way of enjoying a simple sushi lunch! By the way don't think they serve any other cooked stuff other than miso soup.

I had not been a big fan of Kaiten sushi (conveyor-belt sushi bar), until I came to Toyama. There are many good ones here, but several locals recommended this place as No.1, and I tend to agree after my first visit.
Sushitama offers great sushi and great value. Plus, here source of fish is not confined to Toyama Bay, but includes Hokkaido, Kanazawa, and Katsuura (Wakayama). Areas of original production are clearly indicated, which is rare for Kaiten sushi. Weekdays, miso soup is free (customers help themselves). The sushi masters are quick and well-trained, again rare for Kaiten sushi.
Look at the today’s specials written on the board and order some among them, believing your instinct. You won’t be disappointed.
Problem is that this place is so popular, that it will be full, just after lunch time opening at 11:00 am. But, there are a couple of ladies just for sorting out the crowds and calling customers’ names when seats become available, so just sit back and wait for your turn.
Another problem for me is that they sometimes put sushi with too much topping like Negitoro (raw tuna mince). It is not authentic and hard to eat, but hey, this is after all, Kaiten sushi and if you don’t like them, just do not pick’em up.
Today, we arrived around 11:30 and there was no need to wait.
We had;
Bonito, Pacific saury (lightly grilled), soy-marinated tuna, sardine, konoshiro gizzard shad (pickled in vinegar), marlin, greasyback prawn, sea urchin, salmon roe.
All were very good and price was incredibly low.
I have visited several Kaiten sushi bars in Toyama, but so far this one is the best.

I have been going to Shogetsu for over twenty-five years, in all seasons, whenever I visit Toyama. It is located in the Iwase Harbor district, which has been renovated as a tourist attraction. Most recently, I reserved at the last minute (an hour beforehand), and although the restaurant was heavily booked with ceremonies, they offered us a private room for two. For anyone who loves seafood, in particular, Japanese seafood, this is one of the best restaurants for freshness, flavor, and presentation in a region of Japan that is famous for its seafood. There are a variety of private rooms available, some facing a traditional Japanese garden. As mentioned previously, although the restaurant is aimed at ceremonies and celebrations, they welcome the casual visitor, but reserve earlier than I did this time.

お土産にと、「とやマルシェ」で、たくさんある鱒寿司の銘柄から、どれがいいか選ぶことができず、近くにある「源」の店で買いました。よく東京のデパートなんかで見かけるオーソドックスなもので、何度か食べているので安心だと思ったからです。

We didn't know how / what to order from the menu in the beginning because the staff don't speak much English and there's no English menu. After a long while, I came up with the idea for the chef to prepare our meal. We gave him the budget for each person! ($5,000 JPY) Then we had some of the most special Japanese dishes we've ever had before. The sashimi plate is great. We got to try some of the freshest seafood from Toyama Bay. The beef is nice, too. However, it's not the best place for customer with kids.

Visited this very good yakitori restaurant on a Sunday evening and it was already very busy by 6pm. The highlight is watching the single chef produce delicious morsels of chicken, pork, beef and vegetable skewers for around 70 people - he's a hard working guy! The food is good and the bottled beer is better value than the draft. Perhaps don't wear your finest clothes, as despite the excellent ventilation, there's an inevitable smokey smell afterwards.

My husband and I enjoyed a delicious dinner there on 19 April. The place is elegant. We both ordered set dinner with 10 pieces of Sushi and additional two pieces. The chefs are professional and very kind to introduce us the name of the sushi. As tourists, we feel so warmly welcomed. Thank you very much for their service.

The interior décor and settings of the restaurant, food presentation and quality except the beef can be improved to wagyu quality, the overall fine dining service except the minor hiccup in my pre-arranged champagne which could be better coordinated and more English speaking staff, all contributed to the success of the restaurant.
Although they call themselves a French restaurant, I can't see it as a French cuisine as it is a contemporary western cuisine with Japanese quality food ingredients. They could really impress you with wow effects like your forks, knives and spoons are in the drawer of your table, bread in the shape of leaves, 3 types of bread made from rice and wheat, shrimp inside a lotus leaf pouch, etc.
Really a good restaurant only to be polished on the service and English level of staff.

Especially during winter season, you can get fresh and tasty fish. Toyama-bay is very deep (1000meter) ocean where many different kind of fish live. Because of this advantage, fish caught in the morning will be served same day. The chef select fresh local fish from the market everyday. You can't go wrong with this restaurant.
