Danish cuisine, once stodgy and unimaginative, has improved by leaps and bounds in the wake of Noma and its imitators. Most of the ambitious chefs seem to cluster around Copenhagen, but we found a notable exemplar in Roskilde. Mumm is a small, informal restaurant that might easily be overlookedâand it shouldn't be! We asked if the restaurant was named for the Champagne. No, smiled the waitress, "mummmm" is what children say about tasty food. Well, Mumm is mummmm! For example, a thinly sliced squash cylinder filled with tender scallop sushi, pickled and raw cucumber, and avocado hits all the right notes of sweet and sour. And it's a feast for the eyes as well.Diners are advised to choose 4-6 dishes per person, as all are beautifully presented small portions of fresh, organically grown ingredients, deftly seasoned with home-grown herbs and flowers. All dishes are the same price, reasonable for its quality (but don't expect a bargain). The sommelier is knowledgeable and can help you select appropriate wines to complement each dish, many less-known (and less expensive) than typical burgundies and bordeaux..

Very limited dinner menu of a few different steaks, a burger, or a weekly special. Steaks are expensive, but pretty good quality and cooked how they are asked for (rare = rare!) The burger was much better value and was actually very good although not all that hot by the time they brought it out. Service was pretty slow and not very attentive.

Først en ordinær gang tapas. Ja kan nok fås bedre andre steder i Roskilde, men nu er det engang hyggeligt at sidde og sludre og drikke vin med veninderne, og opleve lokalet blive fyldt af festglade mennesker.Da vi trådte ind, måbede jeg over hvordan det gamle store postkontor er forvandlet, og overvejede om det ville fungere - om det er for stort et sted, og for lyst med skydedøre i indgangspartiet, og store vinduer ud mod gaden. Men egentlig fungerer det bedre end jeg ville have forestillet mig. Og så var klientellet den aften voksent dvs. 25-30+ som gennemsnit. Dejligt. Velforsynet bar, fin DJ. Jeg kommer ret sikkert igen.
