Great place to eat. Go early, because you will have to wait. The food is go good. I love the green sauce and the chips were thin and the way I like them. My husband had the John Wayne. Fajita dip was good with fajitas. I had the Arnold Swarzinegger. The soft tacos were good. The enchiladas were delicious too. Atmosphere was great. Will come again when passing thru.

Carthage experienced severe winds (tornado warnings/alarms all around) andtown-wide power outages May 3rd. Rancho Granda was the ONLY restaurant open until power came back on (don't know how they had electricity when no one else did but glad they did !) Staff performed well under the resulting crowds and stress levels. Food was excellent, especially appreciated the fresh/homemade guacamole. Husband had beef enchiladas and I had the cheese enchiladas. Both were tasty and quickly delivered. They are in the process of getting a beer/wine permit so drinks available soon.

My wife & I were pleased one time and disappointed another. The service has never been good. Sometime even amateurish, both times our waiter had to go ask someone a question. The food is not to bad Some what under seasoned, even blah. Food was not on a hot plate so it was not warm. I've better salsa. Can't figure out why there are so many cars & pickups in the lot..
Charlie's Bistro is a great find! It is located on the Panola College campus in the A.J. Gymnasium. Don't worry about having to wait to grab a parking spot since the College has placed reserved parking right in front of Charlie's for their customers. Charlie's is a great place to stop for your morning coffee and grab a quick bite for breakfast. Their Chai Tea Latte is one of my favorite and only $2 for a venti! If you stop by for lunch, I highly recommend their chicken quesadilla or their BLT panini (both are under $4), but their chicken salad sandwich is good too if you are in a hurry. With great prices, good food, and a beautiful campus view, this a great spot to eat and might even have you reminiscing about your own college days.
