Sea Claims in Chicken Soup is a traditional famous dish of Fuzhou. The thin slices of sea clams produced at Zhanggang are boiled in hot water until 60% cooked. Then pickle them in Shaoxing wine with seasonings. Drizzle boiling chicken soups on the sea clams and eat right away. This dish comprises crystal-clear chicken soups and saturated, ripe, crispy and fresh clam meats. Mr. Yu Dafu, a famous Chinese litterateur, credited this dish as a divine dish of color, smell, taste and look in his article Gourmets in Fuzhou.

It is also called Stir-fried Tongue as the sea clam looks like a tongue on fire after cooking. Split the clam meat into two halves, clean them in warm water and cut them into slices. Deep-fry winter bamboo shoot, leaf mustard, tender stem and mushroom slices in oil, scoop them up and put them on a plate. Discharge the mixture of white soy sauce, sugar, Shaoxing wine, chicken soup, gourmet powder and starch into the oil until they become sticky. Then discharge the clam meats onto them for stir-frying and scoop them up rapidly. This dish is then ready for service.

This is a pretty fancy hotpot restaurant with both indoor and outdoor seating along a pretty canal. We were the only tourists.You order the raw main ingredients you want, and they set a burner in front of each diner with a pot of stock boiling in it. Then you dip in your ingredients to cook them, fondue style. At the end, you can drink the soup. The presentation of food was delightful, arrayed on beds of crushed ice. The noodles, house-made, were suspended on a clever wire contraption and were all different colors (I suppose by ingredient, as no one spoke English we just pointed at other people's food). For two people, we had two meats, one vegetable and one noodle and it was ample. Including beer, 200 Chinese Yuan for the meal. A delightful ambience, food as entertainment, great people watching.

Had Luncj lasting over 2 hrs at this very large Restaurant with mostly private dining room. The place we were in was a very large room with conference and large round table to accodate more than 12 guests. wen through an elaborate 7 course Chinese meal

Antai House Restaurant was founded at least 50 years ago.Here you can enjoy tradtional local dishes of Fuzhou. For example,taro mud,fish ball,pot eage plaster,eight treasures rice,meat swallow.I regard this restaurant as the top one among hundreds of restaurants which can provide Fuzhou local dishes.
If you just want to take Instagram worthy pictures then this is a great place. Pretty presentations but not worth the price. Drinks: fancy names but itâs literally sprite or coke lol. Mixed fruit/veggie drinks might just consist of one item. Might sure you ask before order. Food: volcano rice is meh, pretty thou. Skewers are good. Hot dishes arenât bad. Atmosphere: I went on a weekday, not many people. Towards the back, itâs like a lounge with loud music and heavy smoke. Recommend sitting toward the door if you donât like smoke.

I was hosted to dinner by a couple of business associates, who ordered the Fo Tiao Qiang or "Buddha Jumps Over the Wall" which apparently originated from Fuzhou and takes 2 days to prepare using only top quality ingredients. It was very tasty - I finished the last drop of soup.I was told this restaurant serves the best Fo Tiao Qiang in Fuzhou.The other dishes, whose names I cannot recall, were all very tasty as well.The restaurant has private rooms for different group sizes where you can talk business in relative privacy.I can't say if it's good value for money because I do not know how much the meal cost, but I suspect it wasn't cheap.
