I have to admit, I feel like I am reviewing a close friend of our family. In October 2015 we were lucky enough to happen upon "Cooking Classes in Rome" and purchase the experience during our trip to Rome to celebrate my husband's grandmother's 80th birthday. We feel in love with the set up of the class, the history of Rome through its food that Chef Andrea explains to class participants, and especially, we fell in love with Chef Andrea and his passion for cooking and for traditional Roman culture. We spent the last four years, not only recommending the class to other friends and family members visiting Rome, but actually gifted this class to any one we knew traveling to Rome to celebrate a milestone event. Four years later we returned to Rome for a last minute trip before I was about to give birth to our first son. At 32 weeks pregnant, we couldn’t imagine a better way to experience Rome again but by experiencing another Chef Andrea class and enjoying all the food and Roman history his class has to offer. Once again he did not hesitate to impress. He contacted us ahead of time to ensure we knew that he was creating a special menu to ensure that I could eat everything he was serving. When we got to the cooking school, it was like being greeted by a dear old friend who we had known for years. Chef Andrea proceeded to ensure that we were spoiled throughout the cooking classes, making much of the class focused on the anticipation of our new family member. It was the sweetest gesture. I can confidently say that Chef Andrea feels like an extension of our family. We will continue to gift his cooking class to friends and family visiting Rome, and we are already planning to take our newest family member back to experience one of his classes as soon as he is old enough. In the meantime, we will continue to cook Chef Andrea’s recipes at home and keep growing this baby on the best Roman food. We are so thankful to have such great memories.

You will also do a small walking tour in the historic center on the way to our studio. Afterwards, you will learn to make pasta from scratch: fettucine, cavatelli, ravioli. Definitely worth taking a half day out of your travel time in Rome to experience this cooking school with Julia and Pino. Julia teaches pasta making the old fashioned way and Pino is an outstanding chef teaching delicious sauces for each of the home made pastas! Group meal at the end is a perfect end to the 4-5 hour class.

Chef in a Day

You will start your day in the historic centre at Campo di Fiori open market in Rome. One of our professional chefs will take you on a shopping tour where together you will choose only the best in-season ingredients, and decide the menu of the day. The lesson consists of 5 hours of fun instruction and, of course, the enjoyment of the mouth-watering cuisine. More than just the recipes the class is very much about the ‘why’ and ‘how’ of the cooking process. In this way, you will have a deeper knowledge to take home with you. Cooking methods are taught along with creative presentation of the plates. Hands-on practise is an important component of ‘Chef in a Day’. You will be taking part in making an antipasto, 3 different pastas from scratch (one long, one short, and one stuffed), each accompanied by exquisite sauces. The lesson continues with a traditional second course of meat/fish, (vegetarian optional) and you will end this refined cooking experience with a delicious dessert.

We had the luck of being the first group to be taught by chef Federico since lockdown. And it was quite an experience to see the genuine joy of the people at the market and in the specialized shops to see him back at last. He clearly is a well respected member of the community and it was a real joy to see all this top produce and get the explanation of the different qualities and possible combinations as per inspiration of the moment. Chef Federico has it all: he has charm, a great sense of humor, speaks perfect English and most importantly, he is an artist of the senses: learning to knead your pasta until you feel it has the right texture, while wonderful aroma’s curl in your nose enticing your appetite, which is only enhanced by the visual spectacle that is surpassed by the best pasta I ever tasted in my life. And the gnocchi: I never liked them before, that is until I tried his fluffy pillows. We learned equally about how do it right as well as why so many people get it wrong. Chef Federico is also a very good teacher. After all cooking has a strong link with chemistry. You clearly feel his years of training with high ranked Michelin star chefs, but his greatest quality is that he can explain in a simple way how most Italian dishes are made out of a wonderful combination of just a few elements and how one of his mother sauces (tomato of course) combined with other elements results in different dishes. His enthusiasm and love for food are infectious and I go home with the conviction that I can really pull it off to reproduce some of his amazing dishes. All of this (market, visit to the shops, the cooking class) happened respecting very stringent corona measures, so we felt safe. But it didn’t kill the atmosphere, on the contrary. It felt good to return to some kind of normality, cooking in perfect companionship (all of our family being foodies). For me this ranked as the best activity in Rome. Thank you chef Federico !!!
