Pack as lightly as you dare, wear long pants and long sleeves, open your mind to appreciation of distant cultures and get to San Felipe for Juan Cho and his Ixcacao Chocolate. If you're in hospitality this is an incredible experience beyond expectations. If you call yourself a pastry chef or a chocolatier this is a top of the list goal you owe to your profession. Juan is a proud Mayan, a historian, a gifted speaker, author of research papers, a farmer, an exporter, and a first class chocolatier. He is a rock star of chocolate.

Nim Li Punit (Big Hat)

This Mayan site is known for its 25 intricately carved stelae, including a figure wearing a large headdress ("Big Hat").

We took a ship tour with a ferry to the mainland from Harvest Caye and then one hour by bus. The guides, Nate and Felix, descendants of the Mayans, were very knowledgeable and told us lots on the way. The drive was easy with little traffic. Felix told us the people use BMWs (Better Me Walk). Beautiful jungle paths through the site and a museum showing artifacts from the site.

Cotton Tree Chocolate

The cocoa is grown by Mayan farmers in the Mayan Mountains in the Toledo district of Belize. The chocolate is organic and glutin free. Fair trade. Cost a little more but is well worth the taste. I would take it home to Canada if I could prevent melting. After you taste the free samples, you can't resist buying a bar or two.
