MARILAU;Mexican Ancestry Cooking experience was beyond anything we could have expected. Every detail of the day was beautifully crafted, from the kitchen itself to the delicious meal that was prepared. Chef Marilau was extremely knowledgeable (Marilau taught us things which a seasoned chef would know chemical reactions and important details to bring out flavor). Her hospitality made us feel right at home. The day was even more special because It was Dia de los Muertos, and we were in full Costume; So much fun. My teenage daughter and I loved our cooking class with Chef Paco. The ingredients were locally sourced and incredibly fresh. Chef Paco’s home and outdoor kitchen are lovely and well equipped. His recipes are authentic and he shares his wealth of knowledge and local cooking techniques with his students. We learned to make sopes, tamales, pozole, rajas con crema, garbanzos de San Miguel de Allende, three different salsas, chocolate tequila mousse and more, and all were delicious. Be sure to visit his lovely breakfast and pastry shop in town, El Petit Four, where the almond croissant is a highlight.

My mom and I so enjoyed Kris's Indigenous Mexican cooking class and market tour! Kris is so knowledgable -- the tour included a lot of SMA history as well as yummy samples from the market! After our market tour, we headed back to the stunning cooking school (also a B&B!) and made a variety of delicious dishes for lunch. We had a great time cooking with our group -- a fun mix of new pals ranging from a young couple from Brooklyn to retirees from Chicago. Thank you Kris for a special day, a memory my mom and I won't ever forget!

We did a market tour + cooking class with Gaby and it was amazing!! Gaby is so knowledgeable of the Mexican culture and cuisine and is such a sweet / cool / interesting person!! We learned so much about authentic Mexican ingredients like cactus during the market tour and then had an amazing time cooking a three course meal with Gaby in her professional grade kitchen. We felt extremely safe from a COVID standpoint and are so glad we chose to do this experience! The highlight of our trip! Definitely book with Gaby you will not regret it :)!!

Thank you for your interest in my cooking classes! I am an international chef, cooking instructor and have studied regional Mexican cuisine for over 25 years. For the past ten years I have been a full-time resident of San Miguel de Allende. In this picturesque and historic colonial town in the mountains of central Mexico I offer visitors the complete San Miguel de Allende Culinary Experience at "La Piña Azul Escuela de Cocina". My teachers range from many Mexican cooks to Diana Kennedy and Rick Bayless, both recipients of the Orden Mexicana del Águila Azteca (the Mexican Order of the Aztec Eagle). In addition, I had the great honor of collaborating for eight years with Rick Bayless in Chicago, Illinois, which included recipe testing for three of his award-winning cookbooks. The highly informative, culturally and historically rich and fun cooking classes range from basic home cooking to mastering the fine art of making moles. Your class can include visits to local markets, vineyards, artisanal food producers and organic farms. There will be some hands on activities but mostly it will be demonstration. The cost of the class includes the full lunch, traditional Mexican non-alcoholic beverages and a recipe booklet. You are welcome to bring your own wine or beer. Classes usually start at 10 am and are 2-3 hours which includes lunch from the foods prepared in class. Let me know if there is anything in particular that you are interested in learning. Also, if you have any food allergies. Classes are scheduled by appointment to accommodate your travel plans.
Kirsten West is an amazing cook and teacher that blends indigenous ingredients with Mexican foods and makes it look easy. I was fortunate to attend her over 4 hour class and eat some of the best Mexican food I have ever had. Kirsten, from Bavaria, has lived in Mexico for over 25 years and understands the local cuisine. We made corn tortilla stuffed with mushrooms, cheese and a local herb—so delicious. I learned how to peel ancho chilies and stuf them with an amazing salsa/potato mixture. The best part is I have recipes to take home. Taking a cooking class from Kirsten was a highlight on my month stay in San Miguel—she makes cooking look easy and taste delicious.

Our cooking adventure with Alicia at Pura Vida Kitchen in San Miguel de Allende was deliciously fun! First Alicia gave us a tour through the building which houses other businesses with unique wares including super fresh produce. Class participants were just the 4 of us friends, all visitors to San Miguel from the US. One of us was vegetarian; Alicia completely geared the menu to us. We had the opportunity to be hands on - vegetable & herb prep - or to sit back & watch. Loved getting to be hands on!! Alicia was warm, informative & knowledge, teaching tricks and recipes (which she provided later via email so we didn't have to take notes!) Our food was fresh & delicious including the best guacamole I've ever had served w/ incredibly freshly made chips. Alicia even provided tips on other restaurants & sites to see. Terrific time - I would love to return & do it again!

David's cooking class was recommended to us by friends who had participated in prior years. They raved about the experience, so, being low-key domestic cooks, we ventured forth by contacting David. He wrote back immediately with no less than 200 recipes from which we were to choose four as the subjects of our class with him. We met David at the open food market in SMA, where David lead us on an eye-opening and incredibly informative shopping tour for native vegetables, cheeses, herbs and spices for our meals. Hopped in a taxi with our goods and headed for David's home where we met his lovely wife, Amy. David immediately got to work leading us through how to prepare the four recipes that we had chosen. He explained every step and embellished every culinary detail with cultural, historical, social, and gastronomic insight. We got way more than what we expected from David's "cooking class." More like a comprehensive adventure of the senses..
