The Province of Lecce (Italian: Provincia di Lecce) is a province in the Apulia region of Italy. Its capital is the city of Lecce, which is known as the Florence of the South. The province itself is called the "Heel of Italy". Included entirely in the Salento peninsula, it is the second most populous province in Apulia and the twenty-first in Italy.

For the last 17 years, The Awaiting Table Cookery school has been the most praised cooking school and wine programme in all Puglia. (And now the oldest too). Located in the historical centre of Lecce, Italy--or during selected weeks throughout the year, in a castle an hour south of Lecce-- students from 59 countries have chosen us as the best way to go deeper into The Mediterranean Diet, and local, world-class wines. Our school has appeared in The London Times, Food & Travel, The LA Times, Bon Appetit, The New York Times, Food and Wine, as well as Chinese, Japanese, British, American and Dutch television. The owner, Silvestro Silvestori, is a nationally-certified sommelier here in Italy, as well as a wine journalist for a major international wine magazine. All classes are hands-on, fun and actively spent in two of the most beautiful kitchens in all of Italy.
We spent the week at the Awaiting Table with Silvestro in February 2020. Silvestro, the owner & operator of the school, is extremely knowledgeable in southern Italian cuisine, Italian history, the culture, and wines as he is also a sommelier. We met in the mornings at 10AM, visited the markets, returned to the school to prepare lunch. We finished up around 2, took the afternoon off and met again at 6 to shop and prepare dinner. It is a very full day and the break in the afternoon was needed to walk off lunch or take a nap, your choice. We learned how to make pasta, how to prepare fresh, healthy & delicious meals using very simple ingredients, and how to properly use raw olive oil for health benefits. On the other side, we learned how to make homemade sausages and how to stuff a meatloaf :):):) Overall, it was a very educational, tasty & fun weekend and we hope to return when the opportunity arises.

You will learn so much about our local culture through food. Dinners take place at select restaurants in Lecce, Trani, Ostuni, Monopoli. During our gourmet tours you will visit beautiful gourmet shops with an expert in the ancient Mediterranean Diet and food (you will learn what it really means, how it works and why it is so healthy). You will learn that it is not just about what we eat but also about our lifestyle. You will learn many useful principles and tips that you can apply back home in your daily life to improve your energy and happiness. During the guided olive oil tasting, a certified olive oil taster will teach you about the health benefits of extra virgin olive oil and why we should use it both in our food and as a cosmetic.

Salento Coast Ovest is our school, our second family. Was founded in 2004 on the ionian coast, and for 10 years we are on the side of many students. The instructor is Mino Bastia, which guarantees high quality courses witnessed by all of his students, thanks to the experience matured in many years and the passion in this wonderful sport. He is the FIV (Italian Sailing Federation) and offers the opportunity to learn to practice kitesurfing in Salento giving kitesurf courses in Gallipoli in Green Bay or Torre San Giovanni inside the national park, depending on the direction and intensity of wind. Usually in the summer months, we are in Torre San Giovanni near the Camping Riva di Ugento to enjoy a great thermal wind that is blowing about 15-18 knots with a direction predominantly from the WNW and has flat water.

What a wonderful experience! We loved meeting Francesca and Alessandro and learning the art of pasta making! Our meal was lovely, and we truly enjoyed our conversation about Salento, Italian culture, and more with our hosts.
