Reviewed By JohnMcQuarrie - Ottawa, Canada

Take a minute to read the two information panels on the display and this excerpt from: Perth, Spirit of Place by Kay Rogers: "The Mammoth Cheese was more than a novelty. Its purpose was to promote the export of Canadian cheddar around the world as an exhibit at the Chicago World's Fair of 1893. Cheddar’s significance to the economy of Canada, especially Ontario, and to the livelihood of farmers, including those in our area, cannot be underestimated. From the late 1800s to the early 1900s, when cheese was the staple source of protein in the diet of the English working class, eaten half a pound at a sitting in the noontime meal, Canada supplied seventy per cent of Britain’s huge import needs. In the heyday of Ontario cheddar, there were 1,242 cheese factories dotted across he province, exporting over two hundred million pounds of cheese a year. Cheese accounted for thirty-five per cent of farmers’ incomes. John McQuarrie, Ottawa
