It Happened that I was the only student for this session but that enhanced the class. I was invited into the apartment (yes their private home) for the class and learned how to make Pasta. We made the dough from scratch and rolled it out by hand so anyone could make it at home with no equipment. We also made it with a hand pasta roller so if you were to start making it often you would know how to use that as well. We mainly made fettuccine but also some ravioli and tortellini. then all the pasta was cooked up and served on the patio for lunch. What a great experience and fun way to learn.

A journey into Rome’s traditionally “popular” district of Testaccio with your excellent guide Milva, a gastronome, editor of a book of gastronomy and italian cuisine historian. Learn to prepare handmade pasta and other local recipes and enjoy the meal. You will start the lesson preparing the dough for lasagna, then you will roll it out and fill the dressing before the baking. Then, learn how to prepare the dough for tagliatelle with their condiments. Once the work is completed, you will enjoy the meal and the dishes tasting with the chef. You will also learn to combine the local recipes with fine Italian wine, which of course you will taste. After the lesson, you will receive a paper with all the recipes prepared with the chef.

What do you call it when everything comes together? The smells, the food, the company, the sights, even the MUSIC?! You call it cooking with Claudia! As my GF and I were wrapping up our Italian vacation we had two days in Rome. I know what you’re thinking, “what is there to do after the tourists crap”? The truth, nothing besides sit in traffic. But hold your horses, there’s cooking with Claudia! Situated about 40 min outside of Rome in Zagarolo, Claudia and her helper/husband/one man band have created an ideal food lovers paradise. On an off Monday before we were flying back to America’s armpit of a capital my GF set up a cooking class with Claudia and it was seriously the highlight of our trip. We were greeted by Claudia and her wonderful husband Bruno. Right away they made us feel at ease in their wonderful bungalow. After some pleasantries and an introduction to some delicious wine cookies (yeah, awesome, I know) we got down to cooking. No sooner did we do that than Bruno hopped on the piano and started planing some Queen. We cooked so much food I thought we were going to feed an Army. Claudia kept surprising me by turning the most simple ingredients into wonderfully smelling treats (fried Sage in homemade batter? Yes please!) Claudia and Bruno make their own wine (yes, it’s delicious), olive oil (yes, it’s delicious too), but they also have all sorts of fresh herbs growing on their property. Oh, you like fresh sage and fennel? Claudia or Bruno will go grab some from the garden for you to add to your meal. I wish my words could do the dinner justice. The company, food, home made wine, and Billy Joel hits on the piano created an atmosphere that neither I or my GF will soon forget. Eating a truly fresh meal with garden ingredients under a grape vine covered pergola in a late summer evening with great people is something you can’t put a price on. The only downside is that I asked to be adopted and my offer was not accepted, so I guess I’ll continue to adult. I wish I could do this once a week but alas I must return to the good old US of A. However, if you’re in the area, and are interested in a great evening with great people (and want to hear some Billy Joel) I would highly recommend this class!
