Bellville is a city in the U.S. state of Texas and the seat of Austin County. The city's population was 4,097 at the 2010 census. Bellville was named for Thomas B. Bell, one of Stephen F. Austin's earliest colonists, after he and his brother donated land for the new county seat established by voters in 1846. San Felipe had been the county seat before the war for independence.

Hidden away in the heart of Austin County, Texas, Huff Brewing Co. built its reputation on small-batch beers and a constantly rotating portfolio that changes with the seasons. The Huff family has been brewing beer on the property for more than a decade, and what was once a farmhouse chore grew into a professional craft. Today, freshly-brewed beer is served in the brewery's designated taproom: the same location it was once brewed in countless bottles over the years.

Bill was very informative and such a great guy. The jail museum is well done with displays on the main level and then the cells upstairs. It has been kept original which adds to the novelty of the tour. We really enjoyed chatting with Bill and exploring this museum.

From start to finish, the experience was magical, fun and inspirational. From crossing the placid moat via the working drawbridge (after making a reservation and paying for a ticket, people, otherwise, yes, you are indeed trespassing on a residence and should be told to leave), to departing after eating one of the best bakery sandwiches and donuts ever, the experience was incredible— especially if you are intrigued by castles, masonry, wood workmanship, medieval lore, knights and the sublime. Hearing Mike’s story and learning about his passion project and dreams that culminated into the Bakery, castle, and love for Bellville and giving back was wonderful. A must do trip if you are driving through or looking for a perfect day trip!
