I'd been hearing about Panciuto for years but never got organized enough to get a reservation and make the drive, but once I did I realized it's something I should have done a long time ago. This is a charming restaurant in downtown Hillsborough, just across from the court house. The menu changes, apparently based on what local farmers supply, but I suspect it will be fresh and good because the chef is very talented and creative. We got pasta, one dish that had baby carrots so sweet and perfect it was hard not to want to stop at a plate of them, the other had pasta flavored with squid ink that was rich. Both were perfect balances of their ingredients so the elements came together in a harmonious, flavorful whole. The pasta is freshly made and quite delicious with just the right amount of sauce. We started by ordering bread and it was so incredible we got a second order!---lightly grilled freshly made bread served with wonderful sweet butter dusted with flake salt. It, also, could have made a meal. That could be why I couldn't finish my pasta; I took home half of the generous portion and it was almost as good the next day, a lagniappe. Service was extremely friendly and pleasant without being obtrusive and the evening was a delight.

My wife and I met with several friends for dinner at Antonia's. While they offer outside seating, we chose to eat inside as we wanted to be able to converse without any noise distractions. There were seven of us for dinner and everyone raved about the food. Everything on the menu sounded great, so I had a hard time deciding what to order. I finally settled on the 'Pasta alla Romana' (penne pasta with diced tomatoes, garlic, olive oil, red pepper flakes, and parsley). It was perfect! For our antipasti, we ordered one each of 'Antipasto Misto' (prosciutto, a spicy soppressata, salami, various cheeses, black and green olives, and some pickled vegetables), and the 'Verdure alla Griglia con Mozzarella' (grilled asparagus, zucchini, red pepper, tomato, marinated eggplant, and slices of fresh house-made mozzerella). Plus, they offered some half-price wines of which we took advantage.There are many nice restaurants in Hillsborough now, and this is definitely one of them. We'll be back. For sure.

First time visiting and ordered the Calamari. It was served on a small plate and maybe there were ten pieces, all looking dark and toasty. One bite and we went on chewing like a piece of cheap steak. Couldn't grab anyone's attention til the entre came, spoke to the waitress and showed her what was left. I mentioned that it tasted old and was tough and chewy, she smiled and left. The Pizza that was ordered came and I must admit the crust was thin and to our liking but the toppings were meager at best. The marinara sauce is average. Yep, you guessed it.....we ended up paying for the worst Calamari. And funny not one staff member asked "How was your meal"? Save your money.
Seriously the best calzone I ever ate. The dough was exceptional. Everything is cooked to order and with few exceptions is cooked on site. The spinach pie was also very good. With fresh food, there can be a long wait. I would suggest calling ahead. Only open Mon-Sat.

Anna Maria's seems to make up their own hours and stop taking orders whenever they wish. Called 4 times tonight starting at 9:20 pm and no answer. Posted hours show then open until 10:00 pm. This has become a regular pattern and the last time I tried ordering past 9:15 and actually got a live person they were extremely rude. I've been burned too many times, so I'm done trying to give them any business.
