My husband and I visited Italy last year and had the pleasure of spending an afternoon cooking, laughing, and learning with Laura of Cooking in Florence. Laura met us at the local farmers market where we discussed our favorite meals and ingredients, and chose seasonal produce to create our meal. We then walked to her beautiful kitchen where we enjoyed a glass of wine and began too cook! We started with learning to make a simple yet delicious bread, followed by cooking whole artichokes in a tomato sauce, then learned to make our own pasta for an outrageously delicious carbonara, and finished it all off with a decadent chocolate lava cake. We enjoyed our afternoon with Laura so much that we lost track of time and realized we would be late for our tickets to see the David. Laura kindly called ahead to the museum and explained the situation, safely securing our spot! Our time with Laura was one of the highlights of our trip to Florence and one who hope to repeat on our next trip.

After years as a licensed tour operator, I decided to start this new project, Vegan Vacation Time, in order to combine my vegan ideals with my ten years of tour operator experience. In every trip I have always focused my research on where to eat peacefully a vegan dish, this research experience is now the basis of my project for vegans.
I was picked up by Cinzia and taken to her beautiful home where we planned out what we would cook, you can choose anything! We made eggplant parmigiana, fresh pasta, savoury crepes and shortcrust pastry with custard, all vegan and all incredible. Her knowledge of vegan cooking was brilliant and the food was all seriously delicious! I came away with 4 new recipes, all are very simple and incorporate important vegan cooking techniques. I highly recommend learning to make traditional Italian tomato sauce and béchamel sauce, because you can incorporate these into so many dishes. I am so glad I chose to invest in this class, if you love italian food, vegan or not, you will enjoy this class.

I was searching all of Florence for a few days to find a unique leather basket weave handbag - wanted something unique. Most of the shops around town had pretty much the same design. I remember passing the school not far from our apartment in Santa Croce and thought it might be worth the look; 100% was. The prices are not cheap but you get what you pay for. The leather is handmade in the school and it can be custom ordered if you don’t find exactly what you want. I ended up with a beautiful leather basket weave hobo bag in a denim-hue blue. Very similar to a Bottega Veneta bag but at the fraction of the price. My husband and I purchased some bags and accessories having them all monogrammed on site. A nice touch when you are looking for gifts. The staff spoke English well and were extremely helpful with the shipping process and the duty free paperwork to get the items through the airport. If you are looking for unique high quality artisan design definitely make the trip to this spot. Worth the experience even just to see the craftsmen at work!
