The Best Food in Parsons Kansas
My family loves Ernesto's. It is our go-to Mexican restaurant. The food is fantastic. I highly recommend the pork carnita crispy tacos and shredded beef enchiladas. The food is always so fresh and delicious. I like that you have the option of rice, refried beans, whole beans or salad for sides. The beans are wonderful. I usually go for the whole beans myself. I've never had a bad meal there. The service has always been great too. When you are finished, they will give you containers/sacks to take home any leftover food, chips or salsa too! Which brings me to the salsa; it is awesome! I've been to Mexican restaurants all over the country, both chains and local favorites, but have yet to find one that I think is better than Ernesto's. That's not to say all others are bad, just that Ernesto's is better.

We were driving through Parsons & decided to have lunch here, and we were not disappointed! I ordered the shrimp salad, and it was NOT salad out of a bag, but tasty, chopped romaine with big cucumber chunks, cheese, tomatoes & croutons. I could not believe how many shrimp topped this thing! They were seasoned perfectly & tender, not rubbery. My hubby had the Guadalajara plate, which had a shredded chicken burrito & enchilada covered with white queso and lettuce/tomato. He licked his plate clean, impressed with the amount of chicken inside each item. Our waiter was attentive, but not annoying, and we were served complimentary chips & salsa upon arrival. We had a sit-down meal in about 45 minutes, and were back on the road! I highly recommend this establishment.

I love this place!! I would go there almost every day when I was teaching at Parsons High School. The tacos were the best. Just the right amount of meat and not too spicy. Of course, if you wanted to spice things up, the little taco bar had the right condiments to do so. By the way, the staff is the best. Well trained and friendly. Of course, Mike is my favorite. Do yourself a favor and try Taco Mayo--the price is right!
In a town that has so many Mexican restaurants where all the food tastes like the same ol freezer burnt thrown together mush, I have to say itâs so nice to be able to get fresh real homemade tamales, the green chili is second to none and adds just enough flavor to make the tamales irresistible and delicious. For those nights I feel like eating Mexican food Iâll go no further than Tonyâs.
