We only had breakfast in the restaurant but what a lovely room. Somehow this hotel combines the look and feel of a traditional upmarket alpine hotel with being comfortably right up to date. Staff were clearly well trained and efficient but also had the warm friendliness we came to expect in Canada. It was good to have the cheaper and more casual âpubâ option for dinner but that wasnât quite so special.

Best part of our stay at the hotel. Meal was great and service was wonderful. Menu is not extensive but we had the steak which was one of the finest tasting meal I've had. There are several restaurants in the hotel but I can't imagine a better meal and glad we chose this one.Dear Ed J,Thank you for choosing to dine with Walliser Stube during your stay at the Fairmont Chateau Lake Louise. We are thrilled to read you had a delightful steak and will have a lasting memory with us! Looking forward to welcoming you back with us in the future.
The very best restaurants around the world recognise that the single most important thing is the customer - the food, wine, setting can all be lovely, but if the customer does not feel happy and valued then the restaurant has failed in its primary purpose.Sadly for Fondue Stubli, they forgot this rule. Our first attempt to eat there was stopped when we were told that our attire of dress shirt, tailored shorts and shoes didn't meet the dress code (it being 30 degrees C outside and in the middle of the Rockies). We condescended to try again the next night, in trousers! The room itself is lovely - small, low ceiling and intimate. The serving staff were also were pleasant. The fondue itself was tasty, if a little heavy on the alcohol. As the evening wore on, the temperature in the small dining room soared and so my wife, and some other diners, opened the small windows to allow in some welcome breeze. Within minutes the restaurant manager appeared and informed us, with little sympathy or acknowledgement of our discomfort, that the windows had to remain closed for fear of blowing the smell of fondue through into the main restaurant. When it was pointed out to him that this might have been something that they could have anticipated when planning the restaurant, he responded with a shrug and said there was nothing he could do.I am sure that when the temperature outside is plunging, eating in this venue will be pleasant. However, a word to the management of the hotel - you have forgotten that your customers are more important than you. Where you rules are inflexible and your "policies" matter more than the comfort and happiness of the people who are paying your wages, you are on a slippery slope.
