The gold medal went to the comparatively modest starter: raw sea bass on a base of crunchy slaw with creamy kotsuobushi flavoured mayonnaise droplets. Fabulous fillet of beef, beautiful meat perfectly cooked served with charred (carrot cooked on embers) and borderlaise sauce. Friendly greeting, service and good send-off. Nicer ambience in the dining room than I remember from last time (though canât pin down why).
