Our Acetaia A well-rouded family-run businnes, Angelo focuses especially on the production of Balsamic Vinegar and Vignola Cherries. The Acetaia (italian name for balsamic vinegar factory) is entirely made of wood. From its broad mezzanine floor you can see the aging barrels. Be them oak or other wooden casks, here is where the flavour intensifies over the years, before the vinegar is finally bottled. Our boutique of balsamic vinegar is furnished in hospitable and in familiar way with a union of antiques furniture and barriques. we make degustation of our balsamic vinegar for individual but also for groups. We have about fifteen different types of balsamic and they go from the aged dense and creamy ones to the extremely acetic, strong-smelling and also aromatic (ones). All the year we propose also typical products of Modena and Emilia as: salami, Parmesan, Lambrusco wine and other products.

We were looking for a museum of balsamic vinegar in the centre of Modena and were advised to come out to Spilamberto to visit the Museum of Traditional Balsamic Vinegar. Previously, we were only aware of the balsamic that you can obtain in supermarkets back home, but that is a pale imitation of the real thing. The tour of the museum, for which there is a modest charge, starts with a video in English explaining the history of traditional balsamic, followed by a self-guided tour of the exhibits including displays of the equipment used in the production etc. The highlight of the tour is the tasting at the end of the tour, with two samples of the (very expensive) traditional balsamic. It was like a small taste of nectar - heavenly!

We noticed the beautiful elegant, drop of balsamic on a roundabout at Spilamberto. We were on our way to visit the museum & to have lunch in the town. It must be a relative recent sculpture, because it was not there when we last visited in 2012
At the Passini Farm we make sure to take good care of our cows in order to produce the best quality milk and thus the best Parmigiano Reggiano. Come to our farm and you will see where the making process of the King of the Cheese all starts! You will of course be able to buy our products, including our Honey and Balsamic Vinegar. We also offer visits of our Cheese factory.
