I have been watching the Jax Cooking Studio site for a while, waiting. My husband and I only have a day off together every other weekend, and we are on night shift. To say it’s sometimes difficult for us to find things to attend together, is an understatement. I finally saw a class that not only fit our schedules, but it was also something that we were both really excited to make! I signed us up and then the hard part-waiting for the day to come! The website is really user friendly and it was a breeze to purchase our tickets for the Family Night, homemade pasta class! When our day came we drove over to the location and walked on in! We were greeted by one of the Chefs right away and she showed us where our cooking station was. The inside is a beautifully designed set up. There are cooking stations lining the outer walls that have all the equipment you need, with hand washing stations in between them. Then in the center of the room are the dining tables that have place settings ready for you to eat the food that you create. In the back of the room is the Chef station, and it is set up just like the ones you work in as a student, but set up so that you can watch also on three tv’s in the front of the room-pretty clever! We got some aprons and we were all ready to go! The owner even came over and chatted some with us, which I thought was a nice touch. Pretty soon the class was starting, and we were introduced to all the Chefs and staff and told a little about what to expect. I really really wish I had written down the names of everyone, they were all so amazing and kind and helpful! A million thanks to the whole staff. Pretty soon we were sent to our stations and everything was set up for us to make some homemade pasta dough, bolognese sauce, ricotta filling (all put together into a lasagna) a ceasar salad and tiramisu that we did with a little help from some premade items! I have long wanted to try this, but was a little intimidated before. The instructions and demonstration took all the anxiety away and we were able to just enjoy the experience together. I do possess a bit of cooking knowledge and skills, however there is nothing I can think of now more exciting than making pasta from scratch. We were given ample time to make sure all the tasks got done, but we were still not rushed in any way. The class was two and a half hours and I thought it flowed at a really perfect pace. The staff members circulate during the time you are creating your masterpieces, giving positive feedback and answering questions or just chatting with everyone. It really is an awesome laid back atmosphere for learning. After all the cooking and laughing, we sat down to eat our little labors of love. We started with the salad while our lasagna finished in the oven and then rested a bit. Then the moment of truth..how had we really done? It turned out so so so so good y’all!! Followed by the tiramisu that was creamy chocolatey and delicious! All our left overs were packed up for us and we were sent away with smiles on our faces. We are still talking about the fun time that we had, and the amazing food we made. Stephen and I like to try new things and decided when we got married just a handful of months ago; that we would always have adventures with each other, no matter what it was. This is just our first of many cooking classes together for sure. Thank you Jax Cooking Studio!

The fact that there are 15 different brews to choose from is only the beginning of this little Jacksonville brewery. There are usually 2-3 different beers for any taste. Like an IPA, there are a couple. Brown or porter, compare these 2. Aside from the 2-4 staple beers, next time they'll likely all be different, so, if you love one, drink up. The thing that really sets Hyperion apart from the rest is the atmosphere. You're just as likely to end up having a couple with one of the very personable owners as the friend you're waiting on. You'll laugh and smile and feel at home. The set up of the place is very casual with tables for your group, the bar for making new friends, and the back patio beer garden for summer evening or fall nights with the fire pit tables. With any luck, you'll run into one of the core patrons, a member of their "mug club" style group who will tell you about Springfield, Jacksonville, or craft beer. These people have input as consumers to help improve your experience. Lastly, take time to enjoy the Big Jim flight of all 15 options (WITH SOME HELP) or sign up for the Helios brewing experience where you help create your own beer with the head brewer.

Stumbled upon this place whilst in downtown Jacksonville.. Thankfully as there is nothing & I mean nothing to do in Jacksonville on a weekend. This place is a gem..we are out of towners from UK..safe.. friendly..fab choice of craft beers..$4-6..$2 mimosa on Sunday. Good atmosphere on game days. The bartender was Fabulous.. utterly Fabulous. We came sat night & sunday as it was so good! Would definitely recommend.
