June 7, 2021 Florencio Paulino

The crown jewels, Buckingham Palace, Camden Market…in London, history collides with art, fashion, food, and good British ale. A perfect day is different for everyone: culture aficionados shouldn't miss the Tate Modern and the Royal Opera House. If you love fashion, Oxford Street has shopping galore. For foodies, cream tea at Harrod’s or crispy fish from a proper chippy offers classic London flavor. Music and book buffs will love seeing Abbey Road and the Sherlock Holmes Museum (at 221B Baker Street, of course).

We had a private cooking lesson for my girlfriend and I to celebrate her birthday. We are both vegan and like eating Thai food but it is the one cuisine that we don't know how to cook at home. I was nervous about having a cooking lesson because I thought that my efforts would be judged and perhaps I would be too slow. Fran was quick to respond to emails and I chose the private lesson because it allowed my girlfriend to choose any 3 dishes rather than one of the specified set menus. Fran did explain that she'd have to see if there would be time to cook the selected dishes. My girlfriend chose a soup and 2 mains and Fran confirmed that there would be enough time to cook those in our session. We were taught how to balance the taste of our dishes and made a Tom Kha Het soup, Phad Thai and Massamam curry. The session was very relaxed and we were able to ask loads of questions about the ingredients and how to cook them. We've made all of these dishes at home and genuinely think that our food is now better than the food we were getting at Thai restaurants. The recipes have been tweaked to suit our personal tastes eg a few more beansprouts in the Pad Thai etc. The session was so good that we booked another lesson with Fran and so will be seeing her again in a couple of days to learn how to make Red Curry and other dishes.

I went to a Sunday afternoon class to learn vegan baking. On arrival, we were given some freshly baked bread to snack on while we waited for everyone to get there. You can take your own drink which was great, there is a small supermarket just opposite if required. I am not vegan myself or even vegetarian so I was dubious as to how the bakes would taste given the lack of butter, eggs and milk. We started off with a little chat about how vegan baking worked so you could in theory adapt normal recipes to become vegan although, this might take a little trial and error to get things right. We then stood at our workstations and worked in pairs, all the ingredients were pre weighed out for us and equipment set out ready. We made chocolate brownies, choc chip cookies, carrot cake and banana and peanut cupcakes with frosting. I hated the peanut and banana cake. (due to my hatred of banana) but the head chef suggested an adaptation of the recipe using just the peanut butter that I expect I will love! The instructions were easy enough to follow and there were helpers running around the kitchen to bring us anything we needed, offer help and even clear up our mess (what luxury)! We were given a little instruction booklet with the recipes to take home, I have since made the brownies and the cookies which have turned out well. My friend and I definitely want to return to try out some other courses, she is vegan so we will likely try some of the other vegan courses eg pasta making. The workshop represented fantastic value for money and everyone working there was delightful. We can’t wait to go back maybe with a few more friends in tow!

I did the cakes and pastry class which was fantastic. Maria makes you feel very welcome right from the start. For beginners like me, it was an ideal introduction to the world of baking. The recipes were accessible and utterly delicious. I'd say this class would also be good for anyone with previous baking experience, since Maria gave lots of helpful tips that will improve anyone's baking. You get welcome cookies on arrival too, which were AMAZING! Highly recommended. Oh, and I felt completely COVID safe. Spacious kitchen and a high standard of cleanliness

A group of five of us attended the Full Day Cooking Course at Enrica Rocca to celebrate a friend’s birthday. We had a fabulous time and enjoyed it from start to finish. We loved shopping for fresh, seasonal ingredients; sitting around the kitchen island chopping and chatting; discovering an amazing variety of anti pasti; making pasta; the exquisite Prosecco and wine; and of course, the eating. Throughout, Charlotte and Claire were lovely - perfect hosts, and we all left feeling not only full and relaxed but that we had learnt a great deal and gained lots of new ideas. If you're considering one of their classes ... look no more! This experience far exceeded anything we could have imagined. Our bubble of 4 people chose an early start ... "Morning Catch" starting at 5:45 am! (All Covid protocols were closely adhered to) CJ and Stewart were so welcoming, genuinely caring, enthusiastic and so knowledgeable. They went above and beyond for us and are both obviously an integral part of the Billingsgate Market. Great story tellers and an authentic experience that I would highly recommend
