I have owned bars and restaurants in Edinburgh for over 20 years and have run Holiday Let apartments for over 10 years - my job has always been to make visitors to my city feel at home. I love beer, wine and whisky (a little too much according to my wife!!) and am passionate about good quality Scottish food and drink. The experience will be hosted at my restaurant, Smoke Stack, a family run neighbourhood restaurant which was opened in 1996.

A local girl with a huge passion for food (whether that be cooking or eating!) and a love for this beautiful city. I love exploring new places and learning about the way others live and of course, trying new food! There's something special about sitting down to a home cooked meal - no frills attached - shared with great company. Born and bred Scottish (although I may not look it), I'd love to give you a personal insight in to what Edinburgh & Scotland has to offer!

This cooking class lived up to expectations and exceeded them! I had the most amazing day, learning and cooking in a relaxed environment with a team of staff who guided you every step of the way! The day started with tea or coffee and some shortbread while we were shown a demonstration on how to make Pho stock and spring rolls. Afterwards, we headed upstairs to the kitchen where we broke off into pairs to begin our menu. My menu for the day consisted of: Bang Xeo - a vietnamese pancake Pho Ca - soup Summer Spring Rolls Banh Mi - a vietnamese sandwich (which we ate for our lunch) Along with what is above, we made several dips and accompaniments. We were cooking for around 5 hours! As the class goes on, the staff are giving you hints & tips and are there for any questions or issues that you have. No question is made to seem silly or a waste of time. All of the ingredients are lovely and fresh and they don't skimp on how much you get to use. Definitely take lots of tupperware!! I took 2 large boxes plus 3 medium and I was struggling to take everything with me! They would never let you leave without your food though, so don't fret if you run out! You get print outs of the recipes for everything you made along with the demonstration foods. I'll also add that if you are a vegetarian or picky eater (like me!), they can accommodate that - as long as you tell them beforehand of anything really particular! But they will let you leave out anything you don't like, there is no pressure to cook things a certain way. I couldn't recommend this cookery class enough! I will definitely be going back to try my hand at a different kind of cuisine.
