Bienvenido! to Josefina's Cocina con Alama. "Alma" the word for soul in Spanish is how authentic Mexican cooking begins. We invite you to explore and taste the many wonders of Mexcian cuisine through hands-on instruction with the wonderful cook & chef, Josefina. Join Josefina in her Cozumel home and kitchen for a day to learn how to make regional Yucatecan delights as well as other Mexican dishes. The class is designed for those that want a "taste" of Mexican culture (you will even get to visit the local market). It is set up for all ages to enjoy, yet comprehensive enough for those avid cooks looking to hone and learn new skills. Be prepared to eat as you will cook a feast suited for the Mayan gods!
We enjoyed learning how to make all our favorite dishes including refried frijoles, nopales salad, homemade tortillas, guacamole, mayan squash, margaritas and our favorite, achiote marinade. Josephina and her assistant are warm and inviting and very knowledgeable. My husband and I enjoyed the 5 hours we spent cooking and learning with Josephina. We will definitely take another class the next time we are in Cozumel.

Ix-Kool (In Spanish Milpa) represents life through ancient times; This concept will delight us with an explosion of flavors and textures in each of its foods, representing the freshness and innovation of the Mayan culture through the years, without losing sight of its origins and the incredible seasoning of its dishes through time. .

Invite a professional chef to take care of your culinary needs and desires. We cook everything from scratch right in the comfort of your house. Discover the authentic and delicious flavors of Mexico, experience our traditional and modern cuisine. Enjoy a casual or a formal attention with our experienced and professional personal chef service. Welcome Tona, a fourth generation in a family of cooks and restauranteurs. With ten years of experience as a private chef in the Riviera Maya and ten years of experience working for the restaurant industry. He can ensure that your next event is fun, relaxed and memorable.
We celebrated my husband's big birthday this February in Playa del Carmen and hired Tona to create a feast for 9 adults and 3 kids. He and his assistant Luigi prepared delicous guacamole (some for the grownups, some for the kids), spectacular ceviche, a jicama salad, and assorted tacos. Plus a big birthday cake with a Roman candle as the finale. He was friendly, funny, a little bossy (DON'T put the hot tortillas on your plate until you've assembled all the ingredients!) and made delicious food. It was a great party, thanks to him.
