Novara di Sicilia is a small medieval town off the beaten tourist trail, nestled between the Nebrodi and Peloritani mountain ranges. It offers the traveler a unique, authentic glimpse of the middle and renaissance ages of Sicily, from an agricultural and archaeological perspective. Within the city limits is the last remaining operational, water-powered flourmill. This amazing 17th century engineering marvel, functions exactly as it did centuries ago. The operator and maintainer (Mario) meticulously takes the visitor step-by-step, through the same process that turned grain into flour long before the industrial age. It is fascinating to hear the roar of water and see this ancient machine in action. The visitor can also purchase the flour, which comes from local organically grown wheat. My sincere appreciation to Mario and Tindaro for such an enjoyable and enlightening experience.
