Driving past, Liberte doesn’t look like much, but as soon as you walk inside, you get transported to another era. With a huge range of traditional and funky cocktails, lots of local beers and wines, it’s not a place to miss. I can’t go past the food though, Head Chef Amy Hamilton has outdone herself with this tantalising Australian/French/Viet fusion menu. Props to her team as well, both front and back. We had the potato and fennel dumplings, wok fried seasonal greens, Brussels sprouts with sriracha, honey and lime, AMAZING crispy chicken bao, and garlic bread gougeres (choux pastry and cheese balls). I can definitely see why Liberté got written up in 2018 Gourmet Traveller. The price was reasonable- for what we paid, it was near perfection in all bases- service, food quality and quantity, booze and atmosphere.
