Our 2 children had a wonderful time on the activity day for 7 - 12 year olds. They enjoyed all the cooking and craft, and came home with delicious food all ready for dinner, so no cooking for me that night - perfect! I would thoroughly recommend the courses at the cookery school if you want to learn new skills, get some great recipe inspiration or just to build confidence. The children have been busy baking at home since the course, its lovely to see them enjoying cooking so much (just wish the washing up fairies lived here!). Thanks again to everyone for another fabulous day x

I went to a Sunday afternoon class to learn vegan baking. On arrival, we were given some freshly baked bread to snack on while we waited for everyone to get there. You can take your own drink which was great, there is a small supermarket just opposite if required. I am not vegan myself or even vegetarian so I was dubious as to how the bakes would taste given the lack of butter, eggs and milk. We started off with a little chat about how vegan baking worked so you could in theory adapt normal recipes to become vegan although, this might take a little trial and error to get things right. We then stood at our workstations and worked in pairs, all the ingredients were pre weighed out for us and equipment set out ready. We made chocolate brownies, choc chip cookies, carrot cake and banana and peanut cupcakes with frosting. I hated the peanut and banana cake. (due to my hatred of banana) but the head chef suggested an adaptation of the recipe using just the peanut butter that I expect I will love! The instructions were easy enough to follow and there were helpers running around the kitchen to bring us anything we needed, offer help and even clear up our mess (what luxury)! We were given a little instruction booklet with the recipes to take home, I have since made the brownies and the cookies which have turned out well. My friend and I definitely want to return to try out some other courses, she is vegan so we will likely try some of the other vegan courses eg pasta making. The workshop represented fantastic value for money and everyone working there was delightful. We can’t wait to go back maybe with a few more friends in tow!

I did the cakes and pastry class which was fantastic. Maria makes you feel very welcome right from the start. For beginners like me, it was an ideal introduction to the world of baking. The recipes were accessible and utterly delicious. I'd say this class would also be good for anyone with previous baking experience, since Maria gave lots of helpful tips that will improve anyone's baking. You get welcome cookies on arrival too, which were AMAZING! Highly recommended. Oh, and I felt completely COVID safe. Spacious kitchen and a high standard of cleanliness

We loved shopping for fresh, seasonal ingredients; sitting around the kitchen island chopping and chatting; discovering an amazing variety of anti pasti; making pasta; the exquisite Prosecco and wine; and of course, the eating. Throughout, Charlotte and Claire were lovely - perfect hosts, and we all left feeling not only full and relaxed but that we had learnt a great deal and gained lots of new ideas. Swinton Cookery School

Swinton Park is the ancestral home of the Earl of Swinton, owned and run by the Cunliffe-Lister family. Set in 200 acres of parkland on the edge of the Yorkshire Dales, the castle combines the style and elegance of a stately home with the comfort and exemplary service of a luxury hotel. The Cookery School at Swinton Park has been running since 2003 and has consistently achieved high acclaim, most recently as a finalist in British Cookery School Awards 2012. Located on the ground floor of the Georgian stable wing adjacent to Swinton Park hotel, the teaching kitchen is a light and airy room, furnished in country-kitchen style and fitted with the latest appliances and equipment. The cookery school also benefits the hotel’s location at the heart of the 20,000 acre Swinton Estate. The Estate supplies the cookery school and hotel with game birds, venison and foraged ingredients such as elderflower, wild garlic and wild mushrooms, while, closer to the hotel, the four acre Walled Garden provides a wide range of fruit and vegetables throughout the year.Stephen Bulmer joined the cookery school as Chef Director in January 2013. He is also is widely acknowledged to be one the leading cookery school tutors in the UK, having been Chef Director of the Raymond Blanc Cookery School at Le Manoir aux Quat'Saisons for 6 years and also run his own cookery school at Brook Hall in Buckinghamshire. He combines his top-level cookery skills with a gregarious personality - a winning combination. ’He is one of my most experienced chefs and a great craftsman – his enthusiasm is completely infectious’, commented Raymond Blanc.Whilst his career has taken him to work at Michelin restaurants all over the world, Stephen hails from Yorkshire and so has returned to his roots. He spent his childhood in a village on the North Yorkshire Moors, with his first cooking job at The Goathland Hotel before going on to train at The Box Tree in Ilkley.Stephen has created a schedule of half day, one day and two day courses at Swinton Park, which are open to residents and non-residents of all levels of ability. Courses cover a wide range of cuisines and techniques, with themes ranging from Flavours of the Orient to Regional French Cuisine, Barbecue Cookery to Delicious Desserts and Tapas to Bread Making. There are also courses for children, teenagers and professional chefs. Guest chefs teaching occasional classes include celebrity chef Rosemary Shrager and number of other specialists running courses such as Wild About Food (foraging for wild edible ingredients) and a monthly Curry Club. We have two courses for Christmas cooking – Festive Fare and the innovative ‘Christmas in a Box’, which includes a meal for six to take home. The cookery school also provides a relaxed, informal setting for Chef’s Table demonstration dining evenings, where Stephen prepares and serves a gourmet meal in front of you. The school is also available for private hire and for corporate, incentive and team-building events.

Had a great experience at Swinton Cookery School cooking Middle Eastern cuisine in a half day cookery class. Set in the gorgeous Swinton Estate in a nice sized traditionally designed kitchen. The chef created a really nice comfortable atmosphere, with the class aimed probably more at beginner / intermediate cooks which was about right for me. The chef displayed a lot of skill and experience and was really friendly and personable offering tips throughout the day. The menu we created was really nice, even managed to enjoy the aubergine that featured heavily, which I don't usually like, so I guess that's proof the food we cooked was tasty and well thought out. The half-day class gave us just enough time to create a light 3-course lunch menu so we learnt plenty along the way. Equipment was all top-notch and plenty to go around in a class of about 12. The only real piece of constructive feedback is that we had to work in pairs, personally I'd have preferred working on my own so I could have fully prepared and cooked my own dish. This wasn't a huge deal though as still got to do a lot in the time we had. Overall would definitely recommend.
