Perhaps best known these days as the setting for the book and movie “Under the Tuscan Sun,” gorgeous hillside Cortona has a long history dating back even before its time as an important Etruscan center. Top attractions include the Duomo (Cathedral), the small Museo Diocesano across the piazza with its superb art collection, and the fascinating Museo dell'Accademia Etrusca with its assembly of Etruscan and Roman era items. Cortona is also bursting with splendid churches spanning many periods.

Our One-Day cooking class is fun, flexible, informal and hands-on. The class is designed around a typical Tuscan meal with fresh local in season ingredients. Included is menu planning, shopping for ingredients, preparation, cooking and of course critiquing and consuming the dishes you create. The class is taught in English either at our home on Mt. San Egidio during the spring and summer or at our Agriturismo, Il Rifugio during the fall and winter months. Both venues are about ten minutes from the historic Medieval town, Cortona. The class is about 8 hours long. Please see our website for more information.
Learned so much! 3 of us, met with Shirley in the morning, planned the menu over cappuchinos, then set off shopping at the area markets to get everything we were going to make! From the hand picked produce, butcher for filet's and some great prosciutto, and cured meats, to the local mercado for bread & cheeses! (the sheep's ricotta is to die for), then off to Shirley's gorgeous house up above the hill to learn what to do with it all! She was very kind, patient and learned SO much! Her husband, Chuck was very personable as well! We made SO much food-and took a lot back to our apt. in Cortona! Would definitely recommend-no, HIGHLY recommend!!

My family of 8 took a cooking class with Ryan in August and we had the absolute best time!! Ryan explained everything to us and then he and his wife, Deborah, helped us every step of the way as we prepared a delicious four course Tuscan meal. We couldn't believe how many things we learned to make - it was such a fun and relaxing night and Ryan and Deborah made it really special with their warmth and hospitality. We were lucky to have them come to our villa another night to prepare a wonderful dinner for us, and Deborah also took us on three local wine tours, as well as to visit the sights in Cortona, San Galgano and San Gimignano. We loved spending time with her and Ryan during our week in Cortona and we hope to return one day to see them again!

Good Cooking School started in 1993, when chef Roberto Russo moved from Naples. Now Agri-Chef Claudia manages this activity by renewing Roberto's passion and facing new challenges in the Italian cuisine scene. In fact, Agrichef Claudia took part in the Castello Sforzesco of Milan from 29 September to 1 October to represent Umbria and to make known the products of the same kitchen that with commitment she creates throughout the year at the Agri-Restaurant of the Relais Parco Fiorito. She also will participate in Coldiretti Village in Naples from 17 to 19 November 2017. Chef Claudia & Roberto Russo speak fluent English and shares countless experiences in the United States and Canada. They are passionate and enthusiastic of the territory's history of cuisine and culinary traditions... Thanks to their passion and knowledge, they can convey with ease history, origin of, and information concerning foods, and their use in preparing the menu of the day.
