Chateau Les Carrasses is a 19th Century Wine Domaine in the Languedoc, South of France, extensively restored as a luxury self-catering estate and boutique winery. Facilities include a magnificent infinity pool, floodlit clay tennis, boulodrome and barbecue area, conservatory, orchard and olive grove. Stylish self-catering accommodation consists of 30 suites, apartments and villas, many with panoramic views, private gardens and heated pools, and all fashioned from the original 19th Century buildings. Furnished in elegant French style, the properties suit parties up to 8 people, perfect for families and groups of friends. During the school holidays a kids club is open for children of ages 4 - 12 run by bilingual staff, and based around nature, water play, creativity, adventure and sports. Our restaurant awarded 2 toques by the 2020 Gault et Millau guide serves a modern take on Mediterranean cuisine and is open daily for lunch and dinner (closed Monday & Tuesdays in winter). Les Carrasses' wine range alongside a wide selection of the best regional wines and classic cocktails can be enjoyed around the pool, in the salon, the tasting rooms, or on any one of the terraces.
A most delightful hotel! We planned a 2-night stay but an injury and emergency surgery prompted us to stay a week in this beautiful chateau. The staff had already impressed us, but they really stepped up to help us heal. Wonderful food, too, for breakfast, lunch, and dinner, but many nearby alternatives as well. The location is very near Capestang, but feels totally remote among beautiful vineyards. Easy driving distance to Bezier, Narbonne, Carcassonne, the sea, and about a hundred lovely small villages. We will return with kids and grandkids! Highly recommended.

It’s just a beautiful place to stay and we wish we could have stayed longer. It’s an incredible Chateau and Philippine who works there is an absolute superstar she seemed to do everything and she did it with 5* service! We will be back when we have more time!

Amazing setting above the gorge surrounded by mountains, historic 12th/16th century chateau plus nice pool etc. Very comfortable rooms, and very helpful friendly staff. Good value dinner, we ordered one of the better bottles of wine but found it at 15% too heavy. I asked politely to order something else and of course offered to pay for both, but the sommelier replaced the bottle with something much more to our taste and di not charge, very kind. Lovely stay, sadly only 1 night as they were full up the next day.

Wonderful big room in the chateau with a lovely private balcony. We were pleasantly surprised to have a little kitchen which meant we could eat in after too many days of restaurant food. There is a lockable garage for those who arrive on bicycle (like us) and a copious and tasty breakfast to get you fueled up to go the next day. Highly recommended

It's a pleasure receiving you as our guest at Chateau de Lahitte 4 star Bed & Breakfast. The house has been lovingly restored by the present owners and today the house is surrounded by lush parkland and gardens (once the vineyards) with many old trees and lots of flowers.
Peter makes sure that the castle doesn't get crowded by only letting a few rooms. This makes it outstanding: no noise, the swimming pool for myself, pretty much the whole castle…I found Peter perfectly available. I only brought to the swimming pool the bathrobe and as he saw me getting out of the swimming pool he brought extra towels for me, not risking I could get any cold. I had my nice swimming pool hammock with a comfy mattress ready for me. One night got chilled and so that I didn't feel cold he changed my quilt for one that had a type of feathers that would give more warmth (very appreciated). He is very into details. I couldn’t get any place for dinner that night and there he was until I finally got one, excellent by the way. Tons of towels of all sizes. I also had 2 bathrobes - I used the blue one for the swimming pool and the white one for the bath). Both were as light and soft as a teddy bear. The pillows (I am buying the same type back home), bed - slept like a baby,…the tea set of the room (English victorian style even the little spoons),... The castle has different sitting room areas. I loved reading at the one with the library (there are all sorts of books). While my stay I very much enjoyed reading the one about Egyptian art. He made the sitting room ready for me (even with candles on). The prairies surrounding the castle are very nice to walk. Amazing sunsets. The decoration is unbelievable well thought. My room views were to a garden perfectly cut into different shapes. I could get a shower looking at the nature... Even breakfast: 4 different types of homemade jams (one from fruits from the garden) and different type of cheese, all sorts of pastries as well. He always had the breakfast ready for me (anytime as he told me that I was on holidays),…Also having breakfast with a huge window looking at the trees...I enjoyed our conversations while breakfast. It's nice to talk to someone that has great sensitivity for life and art (opera, ballet, paintings...).

Had an amazing time overall. The location is a dream, see the photos. I've seen some negative reviews about the room cleanliness - but I would wholeheartedly disagree, I found everything immaculate. The trip was supposed to be just my wife and I but last minute the babysitter fell through. I would advise against taking a toddler to this place, it is much much more suited to couples for a romantic get-away. So I can't fault the place for not being "family-friendly" - it is not trying to be (and shouldn't try to be in my opinion). The tapas provided was fairly substantial and ended up being good enough to serve as our dinner as we didn't want to venture out with the little one. If I could fault one thing, I'd say the signage on the approach could be improved, if it wasn't for Waze/Google Maps, I thought we were getting lost! Oh, also upon arrival we weren't sure where to go, I thought the signage to reception could be improved. It was a bit awkward somehow even when we found it.

We had a warm welcome from the owner Muriel, to this beautiful secluded chateaux sat in its own woodland. It has been superbly restored over the past few years, blending carefully chosen antiques with original features and more modern fittings. We stayed in the red suit, with a bath in the round tower(first floor, centre and right of photo). As we were the only guests Muriel gave us a tour of the ‘house’, which can also be hired complete as a gîte. In the evening we took the opportunity of a candle lit dinner of cassoulet, the local speciality, prepared by our host. A well stocked continental breakfast, including cake, sourdough bread and cheeses was provided in the morning. A real taste of chateaux luxury and a most enjoyable experience.

We too had enjoyed 15 years of absolute heaven until 2019. Having read most of the reviews from 2019 onward, and indeed 2018 backward, it seems to give a false rating as the early reviews are great. This site from 2019 on is like Butlins on speed. The best part though is reading the replies from the local area manager, complete fiction. All the campers were told that there would be no camping in 2020 but after everyone has made alternative arrangements, they are advertising pitches again!! Nothing in the world would entice us to return, as the 2019 experience was an insult to most peoples idea of a relaxing experience.

I was hosted in this chateau for two nights, the interior spaces are huge, with very high ceiling, luxurious with an antique touch, very clean, the bed was extremelly comfortable, the lady that was the manager/director/reception was very kind, ready to help me with my questions, in the dinning room she offered an exquisite service, always with a smile. The food was extremelly delicuous, simple dishes prepared with regional products with full of flavours, good presentation, enough portions. The breakfast they offer a selection of home-made confitures, ummmmm!!! I recommend this hotel and its restaurant if you want to have a very good experience. Many thanks for the hospitality to all the team of the Chateau de Projan.

I stayed in a 6 bed mixed dorm, which was clean and comfortable, for one night. The castle itself is next door. It's a handheld shower but other than that, all was easy/good, including parking. There's a small bar that's open for coffee in the morning and drinks at night, and a local shop next door. There's no restaurant or takeaway delivery at night, so bring/buy food to prepare there, using their oven/fridge.
