Between different aromas and flavors, like the different seasons, Puglia’s kitchen steps forward like a lightweight dance between earth and sea. Among the white stones and an always tempered climate, its food, today as yesterday, reveals to be a real pleasure and a beauty cure. A delicate maneuvering took us years, to disclose the trick of the ancient dishes the women used to prepare for their husbands, coming home from hard days of work on the fields. The recipes are actualized according to our creative taste, but they guarantee that connection with tradition that astonishes and satisfies. A kitchen with female cooks at “0 Km” and not with chefs, because the nourishment of the body and the soul are the task that require the precision and the sensibility of a woman and of a mother..The dishes are prepared every day with the products of the farm: from the citrus grove of the 17 century we obtain the fruits for the jams; with the durum wheat in addition to the famous bread from Puglia we prepare by hand many types of pasta; along the trails of the estate, among the centuries-old olive trees and the dry-stone wall grow asparagus, tassel hyacinth, pumpkin, sprout of butcher’s broom, artichoke, legumes and “wild chicory”; from the vegetable garden behind the dining room the herbs. It won’t happen to eat the same things twice, not even if your stay lasts two weeks. Every day there is the taste of discovery with which ‘Il Frantoio’ conveys the typicalness of the harvest through the creative taste of the kitchen. Seated in the restaurant, with the stone vaults and floors, next to the fireplace, it might happen to you to get orzotto (made with pearl barley) with pumpkin and sprout of butcher’s groom, wild artichokes cooked in wine and tassel hyacinth with orange honey or laganari (type of fresh pasta) with filled tomatoes or maybe lamb with potatoes from the crock pan. All of this irrigated with excellent wines carefully selected form the best producers of Puglia. A lunch or a dinner at the “Frantoio” is concluded with one of the 35 different liqueurs prepared in the Masseria, but be careful to not miss the one flavored with olive leafs, it is unique in the whole world!During the summer months this theater of culture and gastronomy moves in the open air, in the central courtyard and as a guest said one day: “We are in a painting”*Open also for external guests
Had a fabulous experience at the Masseria last week! Great tour of the grounds before dinner began, interesting and informative! Continued on to a wonderful dinner, wine pairings were spot on, truly accentuating the dishes and elevating the dining experience! Staff was beyond gracious and attentive and really made the night extra wonderful!
Be sure to ask for a tasting of their olive oil as they don't flat out offer it - in an attempt not to be pushy over sales, I'd imagine - but certainly worth it!!

We ate outside at benches and a table, under the 'clock' with the festival to watch below us (late July). Very nice and accommodating staff who served fresh pizza and bruschetta. Good for an early casual supper.

We have just returned from a week staying next door to the restaurant at the Sierra Sylvana hotel in Selva di Fasano (a nice enough hotel which is extremely clean) and were bowled over by the delights of Il Fagiano. The restaurant occupies a handsome large villa and is blessed with a series of elegant dining areas - beautifully decorated and furnished. The service was excellent - friendly and helpful but in no way overbearing. The food was a dream, whether ordered or just appearing as a 'little' extra, and minor variations to the make-up of dishes to meet one's preferences or appetite were accommodated with pleasure. For our second and third visits (there would have been more had it been open on Monday and Tuesday), we left the choice of wine entirely in the hands of our excellent waiter - a move which did not disappoint. We recommend Il Fagiano without reservation.

As we find ourselves spending more and more time in this part of Italy we were looking for somewhere new to eat and found this place on trip advisor- we were not disappointed!!!
Megi is a superb host and happily explained that her husband was both the chef and a farmer. She recommended the anti-pasti as much of her husbands produce is used and it is very fresh. She advised us that we wouldn't have room for a pasta course (although it was available if we wanted it) and that it would be best to order a main course after the anti-pasti so that we didn't over order.
The anti-pasti was superb with around 12 dishes which included fava bean purée, aubergine, courgette, chicken wings, meat balls, etc. The fava bean purée was especially good.
We then chose from the meat counter and had an ocean beef and a cut of diaphragm to compare the two. Both were excellent in different ways and beautifully cooked to our preference. These were accompanied by potatoes and salad which we barely managed to touch. Unfortunately we didn't manage dessert (we will be going back to try this...).
It was a Sunday lunchtime when we visited and as we ate the restaurant filled up with Italian families enjoying family time over a lazy lunch. This really made the atmosphere relaxed and comfortable and for people like us that enjoy people watching, an insight into Italian Sunday lunch.
We had a litre of wine with our food and as there had been no menu and no prices, we wondered what we had spent. It was possibly the best €50 we spent on that trip!
We will definitely be back here with friends and family and hope to enjoy lunch here on New Year's Day.

We arrived early fir dinner by Italian standards but were very welcomed.
The meat we delicious, great salads ... but best was the recommendations and trials of both main types of Puglian red wine, and above all the huge sampling of their menu that was their house anti-pasti dish!

Sounds like it shouldn't work, but it does. We had the mista platter of bruschetta, tomato, artichoke, warm mushroom and ricotta (yum) and courgette (wow) and the cheese, pear and courgette plate, followed by the small fruit plate and chocolate fondu. Totally delicious and, to be frank, a great option when you've stuffed yourself silly on too much pasta and pizza on previous nights.
We went on a Sunday evening, there was a live band in the Piazza della Liberta which we could hear quite clearly behind the cafe (although take care, the street is not very even and tables get knocked over easily). The slightly hippie-ish, laid back vibe in the evening sun was just perfect.

Eaten here many times, family run restaurant specialising in fresh fish and wines.
Refrigerated counter where you can make your fish selection prior to it being cooked, and Claudio is a sommelier, so he can give great advice on the wines he serves and also what is produced and available in the locality.
Giovanna's anti-pasta is tremendous. Zona Fao has a lovely ambiance and is tastefully restored internally in traditional stone architecture.
Friendly service and great food at reasonable prices.

We came here on our last trip from a recommendation. The pricing makes you double take, a basic pizza is €3.50 and yet tastes better than pizzas that cost 3 times that in the UK. Really good, very helpful staff and excellent wine too.

We went as a party of 9 people and had a superb evening at this unusual eaterie. We had a large table outside, and were served up two huge platters of starters ... a selection of cheeses and salamis. Then followed a selection of cooked meats for the mains - a large arrosto misto really, which was very tasty. There was, amazingly, some food left over, which the staff parcelled up for us to take home. A really great atmosphere and surroundings. Be sure to book this and give it a try, you won't be disappointed.

We've been here for a short lunch yesterday.. And it was perfect! The cold rice with tomato rocket and 'stracciatella' was delicious, as the other one with mango and zucchini! We also enjoyed smoothies with fresh fruit.. The owner was very kind! I would suggest it strongly!
