An excellent sushi chef in Tokyo recommended visiting Sushi Maimon, but also gave me the following caveat: The usual sushi you'll eat won't be that special (maguro, saba, aji, ika, tako, etc.) so keep your expectations low. But, for the stuff that's caught locally, the sushi is really impressive. I went to Sushi Maimon last weekend and really enjoyed it. There are sets to order, but I opted for "ikkan zutsu" (ordering "piece by piece"). As expected, the tuna, mackerel, and squid were solid, but nothing spectacular. Where Maimon really shines is in the fish that are local to the Japan Sea. The Nodoguro (black-throated perch or rosy seabass) was amazing -- among the best tasting sushi I've ever had. Slightly more expensive, but totally worth it. Likewise, the Shiroebi (white shrimp) was also delicious. And, because it's Kanazawa they garnish the shiroebi with gold leaf; really nice touch.As others have indicated, it's conveniently located within the Kanazawa Station building, so if you've just arrived in Kanazawa, it's a great way to get a first taste of what Kanazawa has to offer.

We had some delicious sushi here, and the staff was very friendly and even spoke some English. Itâs easy to order because the have English screen to pick from. Fatty tuna was yummy so was the crab nigiri.

This is my favourite restaurant anywhere in the world!The region is famous for delicious fresh fish.It is a popular restaurant so be early (5pm) for dinner or tempt fate with the possible queue.Extremely well priced.Ordering a la carte from a booth sees your order come to your table by train!!! The small restaurant is located a little off the beaten track in a quiet residential area. It is beautifully furnished and you are warmly welcomed. The atmosphere is relaxed and friendly. The served sushi and other dishes are deviating from the standard and are interpreted somewhat more freely. And that's good, because everything was very tasty. The choice of drinks is also very good. This small sushi restaurant has only 8 seats. We arrived for the second seating at 8:30 pm. Ingredients are top notch and the chef is obviously very passionate. There are no gimmicks or special sauces. It is the chef's particular way of cutting and preparing the ingredients which makes the sashimi and sushi here so good. For example, he served the body of the justifiably renowned Botan Shrimp from the local waters in two ways, one as simple sashimi, the other part grilled. The grilling intensified the flavours.There is a very good selection of sake, albeit not from a list. He suggests one to start with and as you finish one, he suggests another. That way, we worked our way through all the top bottlings from the Kokoryu (é»é¾) Brewery : the special daiginjo and then the Nizaimon (äºå·¦è¡é) and then the Ishidaiya (ç³ç°å±).At the end of the dinner, the chef very proudly told us that Mugaritz and Norisawa had recently dined here. That is true endorsement of his craft.
It was very efficient and the price is very fair. The ordering tablet is kind of confusing so be careful when you order. Service was nice and the atmosphere is happy.

I've eaten at most of the Michelin star sushi restaurant around the world from Masa in NY to Mizutani in Tokyo. I am not exaggerating when I say this may be the best Sushi on Earth. The location is hard to find and recommend you take a taxi from the Kanazawa Station. It's about a 20-25 ride. The restaurant itself is in a quaint residential area. We came here for lunch on a Tuesday and the place was fully booked. The costs ended up around Y40000 or about $380 dollars for two people. Now the sushi. The elegance, simplicity and uniqueness of presentation was spectacular. Being on the Sea of Japan, Kanazawa offers sushi that you can't easily find in Tokyo or Kyoto. Nodoguro is a local fish (very very expensive, you can see for yourself at a market in Kanazawa just how much a whole fish costs) and the Chef here serves it slightly steamed. It is sublime. Other than that, I found the Amaebi to be truly unique. The rice is mixed with the roe of the shrimp (which is blue) and he tops the shrimp with a tiny amount of miso (I think that's what it is). It's a beautiful nigiri that I've never seen before. The experience is unforgettable and I highly suggest anyone with the budget and time to go there. And it's NOT a tourist trap like Jiro in Tokyo.

If you want to enjoy dinner here, make sure you book. Arriving at 5:30pm wonât guarantee that youâll get in. This one is definitely worth a little forward planning. Absolutely delicious. Small location, only a couple of tables. You will probably end up in one conversation with your dinner peers and staff. Enjoy!
