We were taken into this small and unassuming restaurant in a nondescript location in Gifu with few expectations. But we were in for a huge surprise. The amuse gueule already gave us a hint what to expect, and the culinary highlights continued to come, without a single disappointing dish. The cuisine can be called fusion. Our course meal alternated Japanese inspired Western dishes and Japanese food, sometimes with a small Western twist. The Chef, Tanaka-san, manages to create dishes with a multi-sensual appeal. The food presentation is excellent, but with a clear focus on presenting the ingredients of a dish in a great way, without extravagant and pointless decorations that don't add to the taste. With some dishes the smell is an integral point of the experience, like with the Japanese soup, which delights from the moment you open the lid. And when you taste the food, you will discover that each dish is a masterful composition with a nice complexity. Great harmony on the first bite, a little twist to follow, and a finish that leaves you both stunned and happy.We had some really memorable dishes, like that sugar glazed red tomato at the very beginning of our meal, the salad that was a discovery tour with hidden surprises through a garden of greens and seafood, the small crayfish with that great sauce, a seemingly standard dish like beef with foie gras which was perfectly executed to a level that challenges the creme de la creme of French chefs, the dessert platter with small tidbits that all were a delights. I could go on, and the fact that I still vividly remember each single dish after one day is a testimonial to the excellence of the food.The only minor letdown was that the inexperienced service didn't match the level of the food. On the other hand, the value is great. Food that easily is on 2 star Michelin level, with ample drinks (beer, wine, sake) at USD 100 per head.So if in the area and appreciative of fine dining, this one one place that you should not miss. And if in Nagoya, the place is definitely worth the short trip to Gifu. Very highly recommended!
