In 1993 the Illinois state legislative named Springfield "the Chilli Capital of the Civilized World" because of its numerous great chilli establishments but no "chilli" in Springfield compares to Taylor's. I have been eating Taylor's Chili for over 60 years and took cans of it to college with me and when serving in the Army. My cousin's mother sent it to him when he was stationed in Korea. I always have the chili but others in the family enjoy the butterbean and vegetable soups. The menu has expanded over the years to include tacos, taco salad, nachos, hot dogs, chili dogs, chili cheese dogs, and chili mac. I eat at the parlor whenever I am in Carlinville but otherwise fill my craving by having a can of chili every Monday. The restaurant recently moved from the NE corner to the NW corner of the Carlinville. The new location is larger and more comfortable. The service is always prompt and friendly. Love it!.

Taylor's Chili is famous in Carlinville, and has been open for at least 75 years (but has moved in location 3 times during that time.) Taylor's is high quality chili, regarded by many to be gourmet chili. It's a little spicier than most chili, so if you don't like hot chili, you may not like this. Unusually fine quality using top quality ingredients. They also sell it canned, so if you really like spicy chili, then you can take a few cans along with you. Nice atmosphere with pleny of seating. A unique landmark type of place in Carlinville, right on the north side of the Square.

Their food is as authentic as anything you would find in a good restaurant in Mexico. Very tasty, and the portions are large. Not too spicy as served, but you can always spice it up with hot sauce (provided). It won't compete with the Acapulco restaurant chain in Los Angeles, but if you like Mexican food, it's about as good as you can find anywhere in the Midwest. Reasonably priced, fast service. Very good.
