秩父旅行の際、ランチで伺いました。こちらはシェフ自ら畑を耕す自給自足のレストラン。お店は2階で土日のみランチ営業しています。ランチセットを注文。前菜、サラダ、スープ、パンがセットでピッツァ or パスタを6種類から選びます。前菜から手が込んでおり、地元の食材が見事に料理されています。ピッツァはマルゲリータ。ハナマンテンというブランドの強力粉を使った生地は、キメが細かくやさしい風味。絶品だったのは秩父の吉田牧場の牛乳で作られたモッツァレラチーズ。ミルキーでまろやか。生地とのバランスが抜群によかったです。パスタは秩父産天然鹿のミートソース(リングイネ)荒く刻まれた鹿肉は存在感十分。程よい野性味と赤身の美味しさを感じ、トマト控えめなのもよかった。白いんげん豆の食感、生クリームのムースでコクで非常に美味しかったです。有機野菜という安心感もあり、秩父産の食材を使いこれだけ美味しいものを頂け、大満足です。

If you're looking for some excellent wholemeal pizza cooked perfectly in a big hand-made pizza oven, smoked ever-so-lightly with sakura (cherry) wood chips - this is the place. It was SOOOOO yummy! For a very relaxed lunch, we had 2 different pizzas and a pasta dish (shared by the 3 of us), it was served with a big leafy salad for each of us, as well as homemade a sweet creamy dessert and tea or coffee. My ONLY complaint is they only serve Earl Grey Tea - and I'm not a fan of Earl Grey nor Darjeeling, unlike most other ladies.The pizza and pasta change regularly with the seasons, I heard. This time, we had a creamy mushroom pasta (being autumn) ... I had to seriously stop myself from licking the bowl, it was that good. We had a Margherita pizza (fresh tomato, basil & water buffalo Mozzarella cheese) and a Bianco pizza - fresh Ham and Kureson (Watercress) topped with freshly grated cheese ... both were gone in seconds!!As extra, (which was over-indulging) we ordered the Yamagata pork with bok-choy which was sublimely cooked. It was so juicy and tender ...The restaurant's interior is quite spacious with a cool, avante-guard feel to it, everything focuses on a natural handmade look of wood, leather and concrete. The choice of music playing in the background was great ... so you can relax and enjoy your meal - and you can't really hear anyone else's conversation.The young couple who run the restaurant can speak English and there is a basic menu in English - but, the menu changes daily. We just asked them what's good to eat. It's probably a good idea to reserve a table - as they seem pretty busy for lunch!They also have a very good selection of wine - very more-ish!!We visit Chichibu once a year ... so, we'll definitely be back!
