Gout de Terroir. OSEA started as a pop-up restaurant in Medellin, Colombia in 2012. We try to find the best local ingredients possible that are in season. While working with local farms we also are growing our own vegetables, and raising some of our own a
I was all prepared to love this restaurant so I take no pleasure in writing this review. It is minutes from my apartment and the reviews were enthusiastic and the pictures looked great. I had tried several last minute forays but they were always full. Finally, I called at midday and was able to snag an 8pm rez for Saturday night at the "bar". From the photos it appeared to be a couple of chairs in front on the kitchen which is great for me since I can watch the food being prepared.. Instead, it turned out to be a couple of chairs facing the wall, very unpleasant. When we asked for the other chairs we were told they were reserved, but the couple who sat there had a drink and left.We ordered a couple of vodka sodas. The waiter brought them with a single ice cube. When we asked for more ice he brought us each another cube. So we sat facing the wall drinking warm vodka. When the couple vacated the other chairs we asked to move but were told it was reserved for another couple and a tasting menu. When the chairs were occupied there was no sign of eating at all; rather there were some folks who appeared to be socializing with the staff. The waitress noted our unhappiness and provided some complimentary olives and ultimately moved us to a vacant table. The few menu choices were uninspired and did not include any of the more appealing plates featured in the pictures on this site. There were only 2 fish choices; a smoked salmon and avocado toast appetizer and a fish and chips main course featuring tilapia. Really, two farm raised fish choices and nothing wild or fresh? We ordered the salmon toast which turned out to be hot smoked. It tasted okay but it was a simple dish that anyone could make at home. The other appetizer was the octopus with beans and guanciale. It came with a properly cooked single tentacle. I could detect no guanciale which typically imparts a strong smoked bacon flavor. Again, okay but a single tentacle and a pile of beans? My girlfriend doesn't eat meat and she was looking forward to one of the pictured chicken dishes but they were not on the menu and neither of us eats tilapia given its doubtful health properties and non existent flavor. My girlfriend decided to skip the main course in favor of leftovers at home. I ordered the pork shoulder (bandiola) at the chef's suggestion. It was the tastiest dish of the night but nothing memorable. It is clear that the chef is talented but the effort was just not there on this night. Most of the dishes were easy and safe and none featured premium ingredients. The prices were on par with other fine dining establishment in Medellin so I wouldn't consider them high, but they did not show up in the ingredients and so the plates were a poor value. Finally, when the bill came were charged 21 mil for each vodka soda. We had the same drink at the bar next door prior to dinner for 9 mil, lots of ice and better service. From the flashes of skill I think the chef is capable of much better performance with if he is willing to make the effort (find some fresh ocean fish!) and upgrade the ingredients. However, given the overall unpleasant experience, I will not return.Dear Sir:Thank you for your comments. I always appreciate well-articulated critiques in order to better our service. I am not looking to give excuses but I would like to address some of your concerns of which you have expressed in your post. As to the couple that sat at the bar, they had come without a reservation, and seeing that there was no space to dine with us, asked if they could have a quick glass of wine before departing. The space at the bar was not reserved for them. The couple that had reserved that particular space at the bar had done so four days prior and asked for those spots specifically. Being a small restaurant and space is limited, so as far as reservations are concerned the order in which we receive them is the placement of the party. We do what we can to make sure that everyone is accommodated and when there is an opportunity to transfer to a better table we always do so. In regards to the ice âcubeâ, all our drinks if served with ice do come with a large sphere as to not water down the alcohol, as happens often in the industry here in Medellin. I have spoken with the bartender to assure that in the future the proper steps are taken, stirring the cube in the alcohol to achieve a better temperature. As per the price we serve only Grey Goose, which is top shelf vodka and therefore the price, I cannot speak as to which vodka they served you and your girlfriend in the other establishment, and therefore I cannot comment on their pricing structure. We change the menu almost monthly, therefore when your girlfriend saw a photo of chicken on a particular website, it was from a past menu. As per the octopus, it is weighed into portions for a starter, depending on the size of the octopus that arrives, dictates the amount of tentacles on the plate. We have looked into your comment about the guanciale and we are in agreement and that has been changed. In regards to the fish, generally we do use wild caught, sustainable fish, but since the fish dish of the month is fried we felt that it was not the best use of such product, of which we do try to source the best available. I appreciate your comments about our skill, although I am not am not completely in accordance with your comments of being uninspired, over the course of almost four years we have created over 450 dishes, sometimes they are smash hits and others are less so, but we always strive to do our best, plus taste is a very subjective, where for example the bondiola dish was nothing memorable for you, for others it was quite the opposite. It is unfortunate that you are not willing to give us another opportunity, if you are interested please let me know personally. Again thank you for your commentary as it will only make us stronger.Best Regards,Salomón BorensteinChef/Owner OSEA

Outstanding tasting menu with 11 courses (hard to count, always wonder if the appetizers count as well). Very fresh food and incredible taste. The âwine paringâ was special with beer and non-alcoholic items being included. Still interesting but we would go for a nice bottle of wine next time. Compared to places like El Cielo, we definitely prefers Barcal. More authentic in our eyes
