I pulled into the Saraguro village hungry and tired. Locals sent me to Shamuico, a restaurant created by locals with an amazing vision of how creating a gastronomic experience can support local agriculture, youth, and community. Samuel, the owner and just one in his cooperative of several chefs, has created with them an original fusion menu of local flavors and spices and the Western palate. I was regaled with surprises, too, a tasty corn galette sprinkled with yumminess and a vegetarian croquette that was to die for, as I waited for my main dishes. The Spanish omelette with a flavor twist was delicious and a generous portion, and the mixed salad was the freshest salad I have ever eaten, straight from the "farmer's market" so to speak, and delicately prepared with fruits and vegetables think slivered. It was incredibly tasty. I also sipped on a warm horchata, an infusion of local herbs that was delicious. Rolando, my waiter, could not have been lovelier. The service was impeccable. Last but not least the restaurant is beatifully set in an old home with courtyard, with vibrant Ecuadorian indigenous music serenading patrons in the background. After a long and tiring drive, I could not have hoped for better. I hope to head there again this morning (they open at 10, may not be able to) for coffee and one of their tantalizing pastries I did not have room for last night!

I have been there a few times with friends. Itâs a cozy place to hang out and sometimes catch music. They have good bottled craft beers and the food is light but delicious.
On an orchid flower/hiking nature tour for 2 weeks in Ecuador from Quito to Guayaquil - this was our best lunch so far - moist tasty pork and chocla white hominy corn and rice - split pea soup with avocado - simple but perfectly done
The food is good and service is excellent. The diner can see what the cooks are fixing for your order as the place is small. There are many vitamins and minerals for sale and healthy juices and smoothies to choose from. They don't always have what is on the menu.
