Things to do in Fuzhou
January 1 is the Spring Festival on the lunar calendar. A native of Fuzhou must personally make "glutinous rice cake of brown sugar" which is a tradition of Fuzhou passed down through generations. Firstly, cook the sticky rice; put it in a stone mortar and keep tamping it with a big wooden bar until the stick rice is smashed into pastes; and finally produce rice balls, throw the rice balls into brown sugar water and mix evenly. "Glutinous rice cake of brown sugar" (Ci Ba) has the same pronunciation as "happiness" in local dialect and it thus signifies "happiness, sweetness and prosperity" in the new year.
Swimming crabs, a specialty product along the coast of Fuzhou, are cleaned and steamed in a bamboo steamer with big fires. Remove the shells and get the meats. Stir-fry the meats with mushroom, winter bamboo shoots, scallion stalks and oysters and drizzle with egg liquids. Evenly spread the mixture in a round shape and keep tossing the pan until the mixture looks golden on both sides. Drizzle with Shaoxing wines and sesame oils. It takes a golden color and a round shape and tastes crispy outside and tender inside. This dish is a top-grade dish among all and normally favored in feasts, particularly wedding, birthday and other feasts, as a token of good luck.
Fine noodle is manually drawn and air-dried by having fine flour as the raw material and fine salt, mushroom powder and edible oil as the accessory ingredients. It is not pasty after cooking and tastes smooth and delicious. Discharge fine noodles into boiling water and take them out after they float in water. Then add the fine noodles into stewed mutton, chicken, pork and steak soups which are further mixed with wines, green shallots and other seasonings. According to Fuzhou customs, it is necessary to eat fine noodles with 2 duck eggs on birthday. This is called "Tapiing noodle" which epitomizes safety and longevity.
Razor shell is a top-grade species of solenidae and has a brownish slender shell which looks like a bamboo barrel when closed. It can be freshly stir-fried and stewed in soups. As a famous dish of Fuzhou, Stir-fried Fresh Razor Shell is the most featured cooking method of razor shell. Use a knife to remove the meat and the viscera and slice the meat into two linked halves. Discharge the slices into boiling water until they are 60% cooked. The accessory ingredients include water-saturated mushroom, winter bamboo shoots, shallot slices, etc. Stir-fry them with big fires and drizzle with sesame oils to make the dish ready for gourmets. The razor meats are pure white which are a charmingly contrast to the tender yellow of winter bamboo shoots and the stark black of mushrooms. It has a yummy taste indeed.
Dewed River Eel is a famous dish with a high protein content. It has a good and strong smell and tastes particularly fresh and therefore is a very good tonic food. Fresh and live river eel is chopped into 12 sections, with the meats cut open but the bones still linked together. Insert a chopstick into the belly to remove the viscera. Clean the eel body and steam with steak soups above big fires. The ingredients include Shaoxing wine, scallion stalk, ginger, ham slice and mushroom.
Spring roll is also named spring cake or thin cake. As a traditional snack of Fuzhou, it is as popular in Fuzhou as Jiaozi in the north of China. As the legend goes, an ancient Chinese scholar studied day and night and usually forgot eating. Having failed to persuade him to eat regularly, his wife figured out an idea: made a kind of snack called spring roll with rice wrappers and stuffing comprising vegetables and pork. It was spread across different parts of Fuzhou later on and became popular.
Fuzhou has a time-honored dining culture and history. The Fujian cuisine, as represented by Fuzhou dishes, is one of the eight major cuisines of China. Fujian cuisine has a history of 1000+ years and primarily includes seafood cooked through stirring, quick-drying, deep-frying, steaming, braising, quick-boiling and simmering. It is most famous for its soups, best represented by "Fotiaoqiang", "Chicken Soup with Sea Clam", "Lychee Pork". "Fotiaoqiang" is t he most famous dish which is highly acclaimed by domestic and overseas gourmets.
It is also called Stir-fried Tongue as the sea clam looks like a tongue on fire after cooking. Split the clam meat into two halves, clean them in warm water and cut them into slices. Deep-fry winter bamboo shoot, leaf mustard, tender stem and mushroom slices in oil, scoop them up and put them on a plate. Discharge the mixture of white soy sauce, sugar, Shaoxing wine, chicken soup, gourmet powder and starch into the oil until they become sticky. Then discharge the clam meats onto them for stir-frying and scoop them up rapidly. This dish is then ready for service.
