I've lived in north LA for 30 years and I've tried lots of different crawfish kitchens in these parts. They've ranged from good to terrible- lots of people who sell it don't really know how to do it right. The two keys to great crawfish are fresh, clean mudbugs still kickin' and a flavorful boil, one that's more than just hot. If you've ever tried crawfish boiled dead or dirty, you know what I mean. Personally, if my hands and lips are still burning 24 hours after my meal, those crawfish were too hot. Bill "Crawfish" de la Houssaye has the kitchen that gets everything right. He's from Crowley and he's been fixing Cajun delights most of his adult life and he's not a kid anymore. His crawfish are delivered from south Louisiana ponds every day and he gets a product that's fresh and clean. His seasoning is a proprietary blend that's manufactured just for him, not available anywhere else. The proof is in the tasting. I haven't bought crawfish from anyone else for the last six years. He operates out of a large kitchen trailer with images of boiled crawfish as a wrap. He also offers seasoned/boiled turkey necks and his special sauces. He's available for catering and his offerings include jambalaya, etouffee, and more I'm sure. He'll also sell 30# sacks of live crawfish to those who want to boil their own. During the summer he schedules trips to Ruston to sell fresh and boiled gulf shrimp and blue crab. He knows the product and has a longstanding connection to top quality seafood vendors on the coast. I know the man and he's the real deal- you'll never go wrong if you buy from Bill!

I went to this venue with family this past weekend. There was a big buffet consisting of salads, vegetables, fried shrimp, fish, chicken, baked chicken etc. They also had desserts of ice cream, cinnamon rolls and banana pudding. The food was good for a small city buffet. The desserts were also ok. I would go back . But it's not the best I've ever had. Service was very good and staff very friendly.

So very friendly fed my three grandsons and myself and my daughter. Was so good. So much we brought food home. It was perfectly cooked and very clean and nice. Tasty and good price.

This is the best catfish place in Ruston. Nice basic menu from which you order when you enter. We had grilled catfish and fried shrimp, and both were excellent. Scott's does a lot of take-out business, so the restaurant is quiet, compared to other popular eateries in Ruston. It's a little way out of the main part of town, but easy to find. It's well worth a stop!Julie, thank you for stating what we hope others discover: Great catfish in a nice location, even if it is a little farther out. Hwy 33, just 1.5 miles from the Interstate, but worth the drive. Hope to see you again soon!

Let’s face facts: I-20 between Dallas and Jackson is over populated with QSRs of mind-numbing sameness. Every exit it’s the same What-a-burger, Chicken Express, McDonalds, KFC, Taco Bell hell. You really do deserve a break today so level up at Flying Burger and try the grilled salmon and zucchini with a side salad. Or......maybe grilled shrimp is your thing. Or......maybe you are like me and just like things that are prepared on order with the FRESHEST ingredients. Or...... maybe even after all this seafood temptation you still just gotta have that burger. A Flying Burger “cheese burger all-the-way” will definitely ruin you for arches and A-frames. Not to mention their french fries which may just be beyond compare. If you are pressed for time, call ahead about 10 minutes out, and pick up at the convenient “To-Go” entrance. 318-232-6428BTW - my personal favorite is the fish tacos and peach ice cream. (For dessert. Not together, that would make the taco soggy.)

My wife stopped by this restaurant on our way back from Arkansas where we were considering for a future relocation. We were tired and hungry and I searched and found Ponchatoulas which was rated 4 1/2 stars and was a seafood restaurant. The was was only about 10 minutes and the texting to inform us the an opening was available worked well. I am almost deaf in 1 ear and have a stutter so my wife did the ordering for us after we made our choices. I wanted sweet ice tea for a drink and since we both like fried pickles we had those for a starter. My tea was served unsweetened but the waitress, whose name I did not hear, did change that on request. We went ahead and ordered our main course while waiting on the fried pickles, I wanted fried catfish well done and my wife wanted the fried shrimp. It took a long while but we got the starter. The fried pickles were very good, not greasy as some places serve them. As soon as our main courses arrived we ordered our desserts since it had taken some time to get our meals.My fish was not well done but was okay while my wife's shrimp were cooked very well and over cooked. We believe the orders were either given wrong to the kitchen or the kitchen made the error. Neither of us liked our main course and were disappointed. We both love bread pudding desserts but were extremely disappointed in that. When we received it, it was more like bread pudding sauce than normal pudding consistency. I want to point out I did leave a generous tip, a little over 24%. Neither my wife nor I was pleased with the food or service so we will not return there.
