The urbanized area around Corbin extends into Laurel County; this area is not incorporated into the city limits due to a state law prohibiting cities from being in more than two counties. However, this area is served by some of the city's public services. As of the 2010 census, the city population was 7,304, with 21,132 living in the "urban cluster" that includes Corbin and North Corbin.

Stopped in for a quick lunch. Service was friendly/fast and food was good! Baja Blast Mtn Dew is one of the main reasons I go to Taco Bell, and it tasted fine. The restroom was clean, and the dining room was a good size. Good visit!
Yes, it is now Santa Fe Mexican Restaurant. We eat at a lot of Mexican Restaurants and this was one of the best we've had. The food was outstanding as well as the service. The prices were surprisingly reasonable. Lunch deals for $3.99. Highly recommended.

The restaurant had a slightly sticky feel to me. The food portions were generous but the quality was only so-so. The servers are very nice. The bathrooms were clean. Wouldn't go again.

Who would have thought I'd find the best quesadilla of my life alongside I-75 in Corbin, KY? The clerk at our motel-for-the-night recommended this place and as it was close, it was late on a Sunday, and we were pooped, we headed straight there.We'd have loved a cerveza after a day on the road but no dice. No alcohol served. For that, you must patronize Mi Jalisco's sister restaurant Mi Casa, nearby. Appropriately, our dining companions were several large--but very quiet--tables of good Kentucky family folk, interspersed with lots of kids.Back to that quesadilla ($9.25): it was full of grilled shrimp, cheese, and grilled onions, along with stuff that makes you feel noble (especially in a carb-packed Mexican eatery) such as spinach, mushrooms, zucchini, tomatoes, and bell pepper. It was served with yellow rice and the de rigueur guac, sour cream, pico de gallo, and shredded lettuce. Really really good.Chances are we won't be stopping in Corbin ever again, but anyone who takes Exit 29 will find at Mi Jalisco a most extensive menu with a choice of delicious quesadillas.

The next time I am in the Corbin area I will stop here again. My food was freshly prepared, very tasty, and served in an appropriate amount of time. What really got my attention was the fact the chicken in my main dish was plentiful and was obviously a genuine freshly cooked chicken that was pulled apart. There was no way this chicken was from a 20# bag of frozen prepared chicken delivered by a food service. Every part of the meal was moy delicioso, the service was fast and friendly, and it had attractive décor. Even though I was there between lunch and supper there were other couples and families dining there too. When I left I noticed the other restaurants had empty or near empty parking lots.

We have been stopping at El Doradoâs for about 7 years whenever we are driving up I-75 to Knoxville or points north from Knoxville. We used to stop there Friday evenings when I worked in Indiana and commuted to Knoxville. They are located right off Exit 25 in Corbin with easy on off highway access. The Fajitas are excellent, and portions are large. I had the Shrimp Fajitas and my wife had the Chicken Fajitas. The shrimp was plentiful, steaming hot and large. There are plenty of beer and wine selections and service was excellent. We havenât been there in about a year and like the new Guacamole cart they bring to each table. They offer fresh Guacamole made at your table. GREAT IDEA!The Manager goes to each table to confirm you are satisfied with the food and service. This restaurant is a cut above others in the area and well worth a try.
