In a valley neat Les Baux, this newly renovated and adapted hotel on the base of an old farmstead there is receiving its guests in very well equipped and spacious rooms with nice views of the valley and the surrounding rocks. Comfortable rooms with nice bathrooms. Perfect service. Large outside pool. Gravel on all ways from parking to and between the buildings makes the transport of baggage a bit difficult and the baggage and trousers dirty.Excellent restaurant with food in Michelin-starred quality. Sorry for the delay. Had a snag with the wi fi. Never mind, here we go:One of our dinners out was to drive to ARLES and enjoy a wonderful dinner (for us, it was a return visit). When we arrived inside the walls of the medieval town, we were told we had 5 minutes to take pictures. I remembered a certain shop I wanted to be sure to find again so, we took off like bolt to find where we we had bought the worldâs best nougat. Got it!!Now off to this wonderful establishment owned and operated by a wonderful lady named Alexia. Your eyes wonât believe all the food that comes to the table. We are dining inside a courtyard inside the restaurant and it is non-stop. Beautiful appetizers, wines, main course and a delightful lemon meringue pie. Wow!The entertainment is so wonderful, led by Paco on guitar and vocals by Gegi.They entertained for a couple of hours and when they found out it was our anniversary, they sat beside us and Gegi sang the most romantic and sincerely given song, the tears flowed (yeah, you all know me). It scared Paco and he held my hand, apologizing. Don explained the âwhyâ of it all.Now, out of the blue, our guide, Phillipe, picks up a guitar and they all play and sing a few numbers. After ten years of visiting this wonderful hotel, the restaurant now has a separate entry; as it deserves. And this comes at a moment when it's all come together. The new chef, Vincent (I checked, he's got both ears!), is young and brilliant. The maitre d'hotel/sommelier is also spectacularly good. Both ooze Gallic charm. (No...not 'ooze'; sounds oily...they're just very nice guys).The restaurant itself is small, so you'd better book, is designed in the 'shabby-chic' mode of the hotel itself, and much of the cooking is done while you watch. (The prep is tackled it the ultra-modern kitchen through the swinging door, as is all the hilariously-authentic shouting!)One of the defining moments for me...apart from the inventive and intense tastes...was watching two little kids watching the chef and getting under his feet at his most hectic...he was so nice to them, and neglected to splash them with boiling fat. Which I would have done.The Mas is about 35 minutes drive from Arles, so if you're dining, and don't have a poor, misbegotten, 'designated driver', book into the hotel for the night. Better still, stay here for the whole trip and visit Arles if you must. It's a grubby little town anyway.
