Shangri-la have a nice local at Shopping del Sol, one of the best located Shopping centers of Asuncion. The advantage of this local is that the client can serve himself and pay according to the weight. Fresh food, fair price and nice attention. I strongly recommend it.

I stayed in Asuncion for a month for business reasons. I am vegan. This was one of the restaurants I frequented for meal options, in particular it was one of the few places I found where I could buy main dishes that included tofu. Asuncion is a tough town for vegetarians and vegans, Paraguay is such a meat-centric society (beef is one of the country's primary exports). The restaurant is a buffet style. You take a plate, select your food, and the wait staff weighs it and charges you by weight. You can eat in or have your meal prepared as carry out. I usually did the latter. The food was fine -- not fantastic, but fine -- and relatively inexpensive. The location is around the corner from the Feria Asuncion store (Paraguay's indigenous department store). Street parking is available but sometimes limited during rush hour. This is a better place for lunch than dinner (it closes early and food choices wane as the day progresses) and it is a "nice to have" option for those who do not eat meat.

I have been in Paraguay for ten days and I am really missing vegetables. I went to Restaurante Seul in hopes of having Korean food. Turns out it is a buffet where you pay by the pound. The only Korean food I saw was kimchi. I'd say the food was what in the USA would pass for Chinese. It was fine food and I was happy to eat vegetables. The egg roll was vegetables and cheese--that is a new one for me. It was a nice change of pace from the carbs I have been eating. I went at lunch and it was super busy. That is a good signal too. I think they might have a menu but everyone seemed to be getting the buffet.
