It was first mentioned in recorded history in 898, and in 1998 the town celebrated its 1100th anniversary. The town was the location of two battles during the Thirty Years' War, which took place between 1618–1648. Today it is one of only three towns in Germany that still has a completely established city wall, the other two being Rothenburg ob der Tauber and Dinkelsbühl.

Well this was a surprise. We were a group of 17 travelers on a 10-day trip across Germany. In Noerdlingen we simply needed a quick lunch and a break from German food. Instead, what we experienced was a highlight of the entire (already very special) trip. Sorbas is a side trip to Greece, thanks to Yanni's great spirit and thanks to the quality of the kitchen. We felt as though we were family arriving for a celebration rather than strangers just passing through. Our only regret was that we were there for lunch and had to stay on an onward schedule. We envy guests who can spend a long evening at Sorbas, enjoying all the stages of a wonderful great meal. (Yanni saved us a bundle on dinner. That night at the Hofbraeuhaus in Munich, everyone still was so satisfied from lunch that we hardly ordered anything beyond the beer!)

I went here while I was travelling with work. The food was excellent. There were three of us eating all meals look great and everyone loved their choice. There was loads to eat. I wished I known about this restaurant the first time I travelled to the area. Next time I travel there I will return.
