In 1980, situated in Puglia between these breathtaking landscapes, uncontaminated sea, and unique colours and scents, Pastificio D'Amicis was established and, since its origin, it has been in accordance with tradition and authenticity. Pasta is our passion. This passion is reflected at every stage of the production process, from the selection of the best wheat to pack by hand. Through a rigorous HANDMADE PROCESS, our pasta is produced with BRONZE: when used, this material allows the pasta to obtain a rough surface that helps the condiment adhere to the pasta. Just after the important process of bronze extrusion, D'Amicis pasta is dryed at LOW TEMPERATURE in order to conserve all the wheat's fragrance. The slow drying method (from 24 to 120 hours, depending on the shapes) allow to preserve the high nutritional value and taste of our products, it develop excellent flavours and keep its shape while cooking, but it is also light, low fat and rich in proteins, as healthy as the environment from where it comes. The result of the combination of these elements is a pasta of absolute quality. THESE FULLY MANUAL AND TRADITIONAL METHODS REQUIRE MORE TIME, HENCE THE SMALL PRODUCTION QUANTITY BUT HOWEVER THE TRADITIONAL PASTA TASTE AND FLAVOUR ARE GUARANTEED AND THIS IS WHAT WE WANT.
