Noci ( "I Nusce" in Bari dialect) is a city and comune in the Metropolitan city of Bari in the region of Apulia, in southern Italy. It has about twenty thousand inhabitants. Established during the Norman time in Italy, the town developed during the Angevin period. On a west to east line it is located between Gioia del Colle and Alberobello. Most buildings in the town are built in a traditional style and are packed together with few open spaces.

The "Capocollo of Martina Franca" is a cold cut salami, namely a type of capocollo, obtained from meat of pigs that were born in big farms situated mainly in the area of the Valle d´Itria. It has been cited in some historical references, as a proof of the fact that it is a traditionally typical sausage of the region. In fact, already in the XVIII century it was well known, not only in Apulia but also in all the Kingdom of Naples, as the most representative product among the charcuterie of this territory. The whole piece of "Capocollo of Martina Franca" is beautifully wrapped in its original gut and a string is tied on top of it to hang it for the traditional seasoning.

Puglia, was a region i had never visited. Normally visitors stay overnight but we decided to make it our base and stayed for a week there in one of the Trulli. Alberbello and it's cuisine are exquisite and not expensive. The area has a lot to offer and i highly recommend it.

Fantastic ebike tour with Germana as our guide. We biked through the countryside viewing ancient olive groves, vineyards and trulli dwellings. We stopped at a cheese producer and had a tour and generous tasting of the wonderful mozzarella products. Highly recommend this tour, and ebikes ensure that everyone can keep up on the hills.
