We had an excellent experience with Joe e Liz. We really loved their hospitality. They welcomed us in their house, surrounded by vineyards, with a glass of good wine and, above all, with their smiles. The apartment was large clean and well equipped, the night was so quiet.. and the breakfast wonderful! We felt at home during all our stay there and joe and Liz cuddled us and our son.. In the afternoon joe showed us his activity through the vineyards and the cellar and in the evening Liz served us a fabulous dinner! We enjoyed the dinner and the company. We suggest this place to everyone!!! Thank you Liz and Joe Paolo, Barbara e Matteo

Unique thing to do: Joe O’Connell, the actual winemaker, personally conducts the winery visits in English or “en Franglais.” This gives you the opportunity to learn about vine pruning & growth from someone who actually has done the work. You'll listen to the story behind the vineyard while meeting fellow foodies and wine fans. On this tour, you'll discover the wine making process, see the barrel room, and taste the wines. With generous tasting portions you will leave smiling smugly as you think of your friends working back home!

Inclusions: Wine tasting

A wonderful night with good friends and fantastic wine. Alexs' knowledge and information about each of the wines and stories were delightful to listen too. I have left with more an understanding of how to look for what a good wine is and what tastes to look out for. My greatest thanks to Alex and would recommend to anyone to visit and have a wine tasting night.

The Fabre Family has been passionate about wine for more than 14 generations. Since 1605, the vineyards have evolved through happy alliances, always remaining close to the land and the vine, today with 5 châteaux in Languedoc. The family maintains an intimate and respectful relationship with nature. Since 1991, organic farming has been taken for granted for Louis Fabre, a pioneer in the region. At the end of the visit, you will have the chance to discover the diversity of our grape varieties and our terroirs, promises of moments of pleasure.

Inclusions: Tasting of 5 wines of your choice, Tasting of local goat cheeses, artisan charcuterie and organic bread!

We spent a wonderful educational evening with Jeanne and for some of the time with her lovely younger brother Andre who drove us up into the hills of their estate to look at the vines. Jeanne has grown up with wine and her knowledge is quite extensive. We looked at the vines ..the grapes...the leaves...the soil and the stones and the flora around the vines....including the wild rosemary and thyme growing on the top of the hill. The views of the vineyards and across the estate towards the pyrenees and the sea were spectacular. We had a tour of the wine cellar and we did some tastings. Jeanne's father also brought some partially fermented chardonnay to let us taste and then we had dinner in the 17C kitchen of the chateau with some back vintages...duck cassoulet which Jeannes mother had made followed by lovely sorbet made locally by a neighbour. Jeanne also provided us with some local accomodation and picked us up from our b&b, in the end found through booking.com in Lezignan-Corbieres only about 5km from the chateau and she kindly took us home again so my husband and I could both savour the evenings tastings without worrying about driving. The wine tasting aspect was done through Airbnb experiences!...everything else was arranged by direct communication with Jeanne and her twin sister Clemence by email and what's app after the initial contact was made. Jeanne is a very knowledgeable and personable host....very accommodating and friendly. The wines were super and some very surprising for us ....the sauvignon blanc more like a new world style, the albarinho and tempranillo also lovely and for us unexpected in this area..the Cru Boutenacs that we had with dinner also a good experience...the older ones with grenache and the younger ones without the grenache..a really great wine learning experience. The Fabre family are a fantastic family of winegrowers and are very innovative in developing new styles as well as refining the already established cuvees..whether in creating more new world flavours of an established grape or growing grapes that are not usual to the area...and being proactive in setting up the Cru Boutenac with other like minded winegrowers in the area. We definitely recommend to visit this wine estate and do the wine tasting and we will definitely return the next time we are in the area. Thanks again Jeanne, super evening with you and hope the harvest goes well.

I can highly recommend this photography tour, even for those already familiar with Carcassonne. We genuinely learned many new tricks, as well as seeing parts of the Cité de Carcassonne we had never seen before, and learning some history along the way. Laurence is a charming, well-informed guide.
