To me the best part of traveling is learning about local cuisine. Vincenzo guided me around the bustling Capo market where I learned about what’s fresh and what’s best and how I might prepare them. Then we went to his restaurant CinCin and cooked up a storm in his kitchen. It was all hands on. I perfected my knife technique and how to handle a saucepan. It was 100 percent terrific including the delicious results.

A Day Cooking with the Duchess, the incomparable Nicoletta Lanza Tomasi Polo at Butera28, is no less than a truly divine cultural and culinary experience. The day begins with a guided visit to the breathtakingly fragrant and colourful Palermo market of Il Capo. So many lessons are learned about how to select the best produce for traditional Sicilian dishes, along with fascinating insights into the history of the area from the eloquent, elegant Duchess. We and the other guests from diverse international backgrounds are constantly amazed by her effortless ability to switch from Italian/Sicilian to perfect English and German, Spanish, French... (she is also apparently fluent in Russian!). Following our excursion to Mercato del Capo, we return to the magnificent 18th Century palazzo where the stunning Butera28 apartments are located. This was once home to Giuseppe Tomasi di Lampedusa, the last Prince of Lampedusa and author of the enduring literary masterpiece Il Gattopardo (The Leopard). In the glorious palace kitchen we learn how to prepare the fresh, all-organic vegetables and fruit as well as fish plucked from the sea that very morning. Nicoletta's delightful staff help make the process easy so we can focus on the continual stream of invaluable cooking tips and cultural knowledge flowing from the captivating Duchess. Then we get to enjoy the fruits of our labour in the spectacular palace dining room, also graced with the presence of the erudite and entertaining Duke Gioacchino Lanza Tomasi - adopted son of Lampedusa and in his own right considered one of the world's greatest scholars of theatre and musicology. The four-course meal is truly gorgeous, all the more so because we are now intimately familiar with the ingredients, preparation, cooking techniques and even the history that has brought each mouthwatering dish to this damask and silver laden table. Then, the icing on the cake - a guided tour of the marvelous Palazzo Lanza Tomasi, brimming with works of art and historical artifacts - the highlight for me being the library of the Prince of Lampedusa and of course an opportunity to view the original handwritten manuscript of Il Gattopardo.
