Welcome to a capital city whose story goes back at least 3000 years. In Beijing, you'll find a wealth of history, both ancient (the Hall of Preserving Harmony, Summer Palace, Forbidden City) and more recent (Chairman Mao Memorial Hall, Tiananmen Square). For the best market experience, choose the Dirt Market over the touristy Silk Market. A visit to the Great Wall, the longest manmade structure in the world, is absolutely essential.

I took the dumpling class (and condiment lesson). Chao was a terrific teacher -- patient, knowledgeble, and very skilled instructor. And the dumplings were delicious! Highly recommended.

Class includes a cooking demonstration, a hands-on session, and lunch; 9-12 guests max, inside a traditional hutong kitchen.
I participated in what I think was the inaugural Black Sesame Kitchen online cooking class with Black Sesame Kitchen founder and author Jen Lin-Liu. Jen had lined up three relatively straight forward Chinese dishes likely to use ingredients many of us would already have at home since we are under stay-at-home conditions: egg-tomato stir fry, garlic cauliflower (ours ended up being broccoli), and pan-fried tofu with dipping sauces. Mixing insights with humor, Jen took us through the three dishes in easy sequence and showing us knife skills (smashing garlic!), stir-fry tips, and how to make on the fly changes. At the end of the class, we had a heaping portion of piping hot Chinese food for about three adults, and healthy and delicious items to add to our dinner rotation. Thanks, Jen!
