Food was my first career, Jim was a pioneering figure in the artisan food world for many years. He still maintains a foot in that world, moonlighting for his friends at markets etc. He uses these connections in nearly all his tours. You are likely to be taken into some store of cafe for a nibble and to meet a local. I have been trained with Ballymaloe Cookery school. After this, I became a teacher. While doing this I became a brewer and now I am a farmer with a passion for fermented foods and cured meats. I got to love all this more through the pleasure of mindful activities and meditation. With Ireland being such a small place I've made friends all around the country who I want you to meet. And we can add in a bit of fun, banter, and consciousness while we are at it.
